So we got new green food cards... but not all of them are here. I got only like half of them and I went to use the old cards but a lot of the prices are different after launch due to price increases. So do I just leave them blank???

Check the prices on the POS for the items you didn't get new cards for. If the prices are the same, it should be okay to use the old cards. If the prices are different, I would just not put the cards out, and let your SM know they're missing.
