As long as there is a temp in there, above 32 degrees, and 6 inches above the ground, you'll be fine.

It's a cooler with no thermometer sitting on the floor. We're also keeping the lemonade and ice coffee at room temp

Lemonade and ice coffee can sit out for 12 hours. It might have changed but that's how long I remember. No thermometer is an issue. Needs to be chilled in there otherwise bacteria growth.

It has to be under 40°F to adhere to food safety standards for dairy, ideally between 32-38°F. You could get away with it as long as it's being temped every hour, but I doubt the health department would approve of an unchilled camp cooler.
