Help with cold foam drinks? (self.starbucksbaristas)

I’ve been working for a licensed Starbucks for about 4 months and my manager and I recently had a disagreement about how much cold foam gets put in cold foam drinks.

He said that 100 ml of milk/sweet cream makes enough cold foam for 2 drinks and I should only be putting half a blender’s worth of cold foam on the drink. I was taught that cold foam drinks get a little less ice that usual and get all the cold foam that you can pour out of the blender (3/4 of it usually).

Which one of us is right?

They keep changing stuff but I’m pretty sure it’s 150ml per drink.

Tbh I do 100 ml if it’s 1 drunk cause I find that 150 is just too much unless they ask for extra cf

100ml per drink regardless of size, but when building the drink you only fill the milk or cold brew to the second line instead of the third, and ice only up to the bottom ridge. Then add foam.

That 100ml amount is important as there has to be enough in the blender for it to foam correctly, even if you don't end up using it all.

Also since we're talking about it please add the proportional number of pumps of syrup if you're making extra foam for the flavored versions. I've seen pumpkin foam colors ranging from blazing orange to "this foam might have had a dream about a pumpkin once" lol.

100ml into the blender but it expands as it whips up, 150ml is enough for two drinks but I think 100ml for two drinks when it’s $1 to add on is scamming hahha

100 is usually ok unless they ask for extra, but I was taught that the standard is 150ml for Grande, 200ml for Venti.

Are you thinking of the caramel cloud macchiato? That was the proportions of 2% for that drink. It’s always just 100ml for cold foam and all sizes get a relatively similar amount of foam

Not at all - I didn't work for Starbucks while that was around. But both my trainer and manager agree that 150ml Grande/200ml Venti

It’s 100 ml of milk no matter the size and the drink should be topped with 1” of foam. If you have a new set of recipe cards, there should be a cold foam card at the front or it can be pulled off of storelink.

If you check your iPad in Store Resources there will be updated recipe cards. If you look it says on all the cold foam drinks, that you should do 100 mL of cold foam in the pitcher for one drink worth of cold foam. So he is right about the 100 mL of sweet cream, but wrong about the number of drinks it’s supposed to make

Ok, thank you. I would check store resources if my kiosk had an iPad, but all our info is on paper and outdated :/

Your manager should have access to Store link and all available recipes and up to date standards. I'm in training to be manager at my kiosk and have just been shown this. But it sounds like they don't care honestly :/

I don’t want to say that he doesn’t care. He very much does care about trying to make our jobs easier. He just doesn’t care about making drinks correctly. This isn’t usually an issue bc he’s never in the kiosk with me but several times he’s tried to correct me on how much stuff something gets and he won’t listen to me until I pull out recipe cards. He has 11 years of experience and I have 4 months, so he usually just assumes I don’t know anything.
