Difference between iced coffee and cold brew (markings and syrups)(self.starbucksbaristas)
submitted by rterrebo
Ighhhht! Your newbie barista is back at it after getting his ass kicked between working espresso bar and cold bar today with another question!
Obviously, cold brew is more concentrated than ice coffee, so we fill cold brew to the first bottom line and water to the top. Ice on top of that. and because there's cold foam we save some room on top for it (CBIC).
Iced coffee we routinely fill with classic syrup (CL) unless otherwise specified and fill it to the second line with coffee and water to the top line (IC). Unless they want milk then we fill iced coffee to the first line, water to the second, and milk to the third (ICM).
PCCF (VSC to line 100 and 2 pumps of PS and blend #3) PCCB (cold brew first line, vanilla syrup, cold water to the top, ice, room for PCCF) ICCB (2 Irish cream, cold brew first line, water to third, ice on top, vsc sweet to 100, 2 pumps Irish, and blend at 3, and sprinkle cocoa in straight line on top). SCCF? Vsc to 100, Caramel pumps, toffee nut pumps, 2 salt packets, blend at 3,
Please tell me others I forgot and how to do them.
Thank you! I love you and I'm incredibly grateful for y'all!

You don’t add water to the iced coffee.it’s iced coffee to the second line and milk to the top line. Then top with ice!
rterrebo [OP]4 points1y ago
What goes between the 2nd and 3rd line if no milk?
pranasoup51 points1y ago
more iced coffee.
shimmyeatworldpeace11 points1y ago
Yes, more iced coffee.

Ice coffee

Please just check the recipe cards on your iPad/the physical cards if you have them!
rterrebo [OP]6 points1y ago
I'll do that before my next shift on Friday.
rockishOBOI31 points1y ago
Since when do you add water to cold brew? I’ve never done that and no one else at my store does either?
brattneybiscuit30 points1y ago
If you have a tap, you don’t need to add water. It is already cut before going into the keg.
_abbycadabby_13 points1y ago
Stores that don't have a tap/keg setup use uncut cold brew, so it gets cut with water in the cup rather than in the keg or cube.
It_is_Katy7 points1y ago
thank you for explaining that! I had the same question, my store has the keg/tap setup
rockishOBOI2 points1y ago
That makes more sense. We have a keg set up
rterrebo [OP]3 points1y ago
That's how I was trained. Sorry.
rockishOBOI5 points1y ago
No worries! We have a keg set up, so I was never told about adding water to cold brew. I was worried I was making drinks wrong lol
rterrebo [OP]3 points1y ago
Welcome to my life. 🤣
rterrebo [OP]2 points1y ago
We do not have a keg setup but we do have filtered water.
BunnyKerfluffle2 points1y ago
Adding water is the old school way, before we had taps.
darkwolf5232 points1y ago
Some stores don’t have the kegs so they have to use the pitchers.
Anxiousurca2 points1y ago
yours is probably pre cut. If it’s in a keg it’s definitely precut.
pranasoup21 points1y ago
to my knowledge it’s not toffee nut in the SCCF, it’s vanilla. also syrup first in all beverages; make sure you’re getting your sequence skills down now while you’re learning!! it’s way harder to retrain your brain once you’ve been doing it another way. also as previously stated, iced coffee is not diluted by any water like CB concentrate is. keep in mind, too, that cold brew gets CBS pumps, iced coffee gets hot bar pumps. you’re doing great!
mama_bibi21 points1y ago
The sccf now gets 2 pumps caramel. The cb itself gets the vanilla. They just changed it a couple months ago
pranasoup1 points1y ago
dope. thanks!
Anxiousurca6 points1y ago
there’s no toffee in the salted caramel cold brew. There’s a seasonal salted caramel latte that takes toffee nut but not the cold brew.
Also i’m pretty sure they changed the recipe for irish cream cold brews to getting vanilla in the cup like pumpkin cream cb and irish only in the foam.
Don’t cut iced coffee. Only cut cold brew. Maybe suggest having pre cut pitchers of cold brew? I literally don’t know any stores who still cut it per cup. It raises questions from customers too who think they’re getting scammed out of some caffeine when they watch you water it down.
briannuzzi5 points1y ago
there is no water in ice coffee! if they want it with milk it’s ice coffee to the second line, milk of their choice to the top line then some ice. (and the classic)
there’s no toffeenut in the salted caramel cold brew! it’s half pumps of vanilla at the bottom, and then in the foam it’s 2 pumps of caramel and 2 salt packets. the rest is right though!
sero50745 points1y ago
Ok so have I been these drinks wrong. 😐
dancygirl13 points1y ago
Please don't make these drinks like this. This is how you make the basics when it comes to CB and IC
Cold brew Cold to the bottom line, water to the top line, then finish with ice. Add milk and sweetener if requested.
VSCCB 4 half pumps of vanilla, Cold brew to the bottom line water to top line, ice, top with sweet cream
Salted Cold crew 4 half pumps vanilla, Cold brew to bottom line, water to top line, ice. Vanilla sweet cream to 150 2 packets of salt, 2 pumps of caramel, blend on 3. Top Cold brew with foam.
Irish cream 2 full pumps of Irish cream, Cold brew to bottom line, water to top line, ice, sweet cream in pitcher, 2 pumps of Irish cream in foam, blend on 3, top Cold brew. Dash of coco in straight line.
Iced coffee 4 full pumps of classic, Iced coffee to top line, ice, top with milk if specified.
Sincerely a 5 year barista trainer. You were both done dirty with training and I'm very sorry about that.
sero50742 points1y ago
Thank you so much omg.

Another super important thing to note when it comes to cold brew. Syrups are automatically full pumps, but at my store cold bar has half pumps so you modify. So when it comes to the amount of full pumps of syrup you put in, it follows the 3-4-6-7 rules when it's regular cold brew. So if you had a venti cold brew with milk and vanilla. It should be getting 6 full pumps of vanilla in it. If you only have the short half bar pumps on cold bar, you can just add 12 half pumps. They're the same. When it comes to vanilla sweet cream and the specialty cold brews those are different. For syrups they follow the 1-2-3-4 rule. So a tall get 1, grande 2, and so forth. So if someone orders a grande vanilla sweet cream, the amount of syrup should equal the 2 full bar pumps, that's why it gets 4 half pumps in the recipe. Does that kinda make sense? I'm a little foggy on the trenta for the specialty, if I'm completely honest, but just look at the iPad for recipes when confused!
sero50741 points1y ago
Yes it makes perfect sense. Thank you so much partner!!
rterrebo [OP]3 points1y ago
Same. 😂
sero50746 points1y ago
Like, at this point I do not even care. No one complains. I make them how I was taught ONCE, I was never trained on cold bar so if I make a mistake someone will tell me and I will make it correctly and move on.
rterrebo [OP]3 points1y ago
I was trained the way I explained. Lol.
sero50742 points1y ago
Right, I was only ever explained once in like 2 hour “training” so tf they want me to do. 😐😐
shimmyeatworldpeace5 points1y ago
I’m pretty sure all foam goes to 150 ml line.
OneRoseDark16 points1y ago
100ml and 2 pumps/packets of flavor in all the foams
Fantastic13577 points1y ago
I’m actually pretty sure you just do a lil splash and pray to the siren
shimmyeatworldpeace1 points1y ago
That part, too!! 😜
broski12439274 points1y ago
Y’All ADD WATER TO COLD BREW?????
rterrebo [OP]1 points1y ago
That's how I was trained. It helps balance out the concentration. Personally, I think it's a rip off but I'm not on paid enough to make those decisions.
dontgiveah00t3 points1y ago
Water goes into the cold brew?!? 😬 lmfao how has no one told me otherwise
brattneybiscuit8 points1y ago
If you have a tap, you don’t need to add water. It’s already cut before going into the keg.
No-Pearl0002 points1y ago
we’re supposed to add water to the cold brew…?
NervosaNervous7 points1y ago
Only if it hasn’t been cut yet. If you have a tap system, the cold brew is already cut with water in the keg.
rterrebo [OP]1 points1y ago
Because it's highly concentrated from what I'm told.
rterrebo [OP]2 points1y ago
If y'all have a phone app or PC pdf for the updated drink recipe cards, please send them my way.
I can message you my number or email.
imeanitpeanut4 points1y ago
They’re on your store iPad in the store resources app.
rterrebo [OP]4 points1y ago
Ughh. I work at a licensing store/kiosk in a grocery store. We don't have one of those.
yirium2 points1y ago
You should have recipe cards!
rterrebo [OP]2 points1y ago
We do. It's in a drawer between the register and espresso bar. We get so busy that we don't have time to flip through. We're serving people, switching hot brewed coffee, switching sanitizers, doing a supply run, doing dishes, or working on midday/closing shift duties. Never a dull moment!
