I worked with a barista who had a baby, and the answer was diapers. She got way more clothes than she needed as well meaning gifts, but diapers add up and you need more of them than outfits generally speaking. Personally I'd find out if there's a brand she prefers and what size she thinks she'll need and get a box or two.

Alternatively, a baby blanket or comfort plushie is also practical and you can get literally any color/pattern/animal. A green and purple plaid or a giraffe would be gender neutral, for example.

Diapers are always good. They’re expensive and she will need a lot of them.
