My manager is telling me if I don’t use my sick hours it’ll be considered an occurrence? This sounds shady is it true that i NEED to use my paid sick hours when I call out?

That's correct. The only protection you have is using sick hours. When going through the procedure to determine if a write up is warranted, one of the questions is if the partner was able to use sick hours, if so then it's not an occurrence.

I think the questions should be… why don’t you want to get paid when you have to call out sick? That’s what the hours are there for so you don’t have to put your paycheck before your health

I would prefer to hold onto them in the event I get really sick and need to lose a few days as opposed to when my stomach is really acting up but it’ll probably be fine the next day

I have heard that if you don’t use sick hours then you have to get the shift covered. Obviously if you don’t find coverage it counts as an occurrence

Yes you are correct. The policy manual says that if you are calling out sick & using your protected sick leave then you are not responsible to find coverage. If you are calling out but not using sick leave, then the absence is not considered excused and you can be held accountable for it. You will need to find coverage for the shift (unless it is some sort of emergency/circumstance.)

but youre not required to find coverage yourself if you’re sick

Only if you use sick time.

It’s what I’ve seen at other stores and have heard from fellow shifts. If you had Covid symptoms, they’d find your coverage no problem but maybe they’re assuming you’re taking it? You could call PCC and ask to find out what the actual policy is
