Isn’t a standard to not pull coffee while it’s brewing? I was always told it makes the coffee bitter and cold. Can anyone help me out so my team can be on the same page?

You should not be pulling coffee until it is done brewing. The reason is taste, not temperature. The first bit of coffee to come through will be very strong, and it gets weaker until its done.
I was handed a coffee from a pot still being brewed and it was horribly strong and bitter. It also leaves the rest of the pot weaker than it should be.
Ive communicated this to my team. Worst case, make a pour-over if you really cant wait the 5 minutes. Dont pull coffee before its done brewing.

Please take this persons advice. The people on the other comment weren’t wrong about the temperature but pulling coffee early is gross. It’s much better to offer a different brew or have them wait.

It’s actually the opposite. The hot plate is actually a slightly lower temperature than the hot water used to brew it. If you let the water sit for a couple hours on the hot plate it’ll keep it warm, but it won’t be as hot as it was when you first brewed it. It’s designed to keep it warm just long enough until the coffee is old, but it’s not designed to make it any hotter than it already is. I don’t remember if it’s an actual policy anywhere, but personally I usually try to not pour coffee from an urn that isn’t finished brewing yet just because the first few cups are gonna be way stronger than the last few so if you pull it too early you’re gonna get coffee that’s too strong. Imagine if you used the same amount of grounds but only half the amount of water, if you pour coffee when it’s only half way done you’re getting that exact same thing.

Because it’s being poured out of the pot AS it’s being brewed. I’ve had regulars complain that their black coffee wasn’t as hot as it normally is when partners pour it before the brewer is done

I'm still confused lol How does near boiling coffee get "cold" from the time it hits the bottom of the pot yo the time it takes to pour in the cup??

Because our brewers sucks most of the time. Idk. I’m just going off what I was taught from my trainer and what all the coffee masters told me since I’ve started 🤷🏼♀️

It's non-sensical. At what point does the coffee stop being cold?? Once the pot is half full? Fully done brewing? If you need to pour coffee, you can pour it while it's still brewing; wayyy brtter than making the customer wait 5 to 7 mins

Yeah, best practice is to let the coffee finish it's brewing to get the best quality of coffee, but sometimes pulling it early is the right thing to do if you need to get coffee out quickly.

Usually the reasoned you don’t want to do it is because the quality of the coffee is less if you start pouring it too soon. Having it settle will create a better taste and less ground will get in if there are any. Haven’t heard about it becoming cold before being done brewing. I would say that part is probably false.
