So basically I know my store is far from standard in some areas and lately I’ve been trying to get us back on track, with this though there are some things I am not sure are standard or not and I can’t figure out a way to check. So I was hoping you guys could help!
First off, are ice caddy’s supposed to be completely emptied at the end of the night?
Are you supposed to empty pastry case daily and replace it with fresh foods? And if so does night crew empty it and morning crew fill it back up? Or is it just store by store?
How many times a day do you pill your bars?
Do you clean the vent things on the ovens daily?
Do you clean bean hoppers daily?

ice bins have been different at every store- i think the standard is cleaned once a day, regardless of when.
pastry case absolutely gets emptied every night. night crew empties and cleans and sets up the plates, etc for display. morning crew fills with food.
standard for mastrena2 is once a day, standard for mastrena1 is still 3 i think.
vents- they should cleaned daily, it takes two seconds and i think is on CSR cards.
bean hoppers are cleaned weekly, i believe. i’m unsure but i do know they need to be vacuumed daily underneath.

You’re right about the pill btw. Mastrena 1 is 3x a day. We literally just got the 2s and it makes life so much easier

If in doubt, all of these standards can be found in writing in the partner hub or store equipment maintenance guide. Sometimes it takes some digging, but unless you have a print-out there will always be someone who says "yeah well *i* think..." even if you have the right answer

Same :( we used to not even do it weekly so I’m glad we are doing it twice a week now but I want to get my store doing it daily because it’s just kinda gross to let it sit for so long

If you look at the big huge book there's a "clean play" page that shows how often and how things should be done

the first page of the clean play section of the DCR should have standards for ovens cleaning, etc and tell you what gets done & how often

KiFor number 2. My shift lead at night usually empty are food case and then I'm the morning the opening manger will set up the food case. With fresh food.

Ideally, ice bins should be empty. It helps the insulation last longer. Pastry case yes, otherwise maggots. As you stated. Mastrena 2 looks like once, the ones can be 3x for cafe/low volume DT. We do 5x a day for high volume. Tech also said more the better and recommended every two hours but no way that’s happening. Vents on Turbochef ovens is as prompted. The newer MerryChef ovens are per cleaning but way easier. Hoppers standard now is wipe down daily with a dry cloth to remove oils, then dishwash once a week. Mastrena 1 is not dishwasher safe, M2 is.
Don’t forget the vent behind the pastry case and inside the chill wall if you still have one, ideally daily. We do it once every 1-2 weeks lol.

Ice bins- I had a store clean them I the middle of the day and keep them full overnight and my current store empties and cleans them at night
Pastry case- in US you empty at night and clean then fill in morning. In Canada I believe it’s different but idk how.
Pill- I heard 2x a day, open and close bht my current store only does it when we close so idk
