Using the hobart, make sure to thoroughly rinse all dishes before putting them in, and start it, it takes 1 minute per load.
Using the 3 sink method, 1st sink is soapy water, 2nd sink is straight water, third is sanitizer, scrub dishes, put in 2nd sink to get suds off, then let soak in sanitizer for about a minute, then sit out to dry

Use the dishwasher! Some people at my store do the 3 sink method and it takes forever and I swear my hands are dying after putting them in the sanitizer so much.

It used to be the 3 sink method OR sink 1&2 plus Hobart. Depending on peoples preference.
But the new “standard” for dishwashing is to basically half-ass rinse and put in Hobart.
Up until they changed the dishwashing standard last year, Hobart was never referred to as a dishwasher. It was always referred to as a dish sanitizer. Reason being, dishwashers completely drain and refill the sump after every load so there’s always clean water. Hobart doesn’t do this. It drains a small amount of water each time. So over the course of the day, the water inside gets filthier and filthier.
