If someone orders x shots of espresso and says they want it “shaken with…” whatever, do you charge them for the Iced Shaken Espresso, or do you just put “shaken” in the ask me? A lot of customers ask for their shots shooketh and in my corporate barista brain it would only make sense to charge for the shaken espresso since we’re upcharging for the shakey. But a lot of people don’t care, and then I feel petty. Am I justified in my feelers?

Nah, you’re right. That’s a shaken espresso.

Once you ask for shots of espresso shaken, my mind instantly starts building a shaken espresso.

Only if they're asking for syrup in their espresso that's shaken, otherwise you're charging them for syrup they're not getting.

Yeah, you’d charge for the shaken espresso since that’s the drink you’re actually making. I don’t think that’s petty at all, I think it’s (a) fair and (b) reflects the amount of work you’re doing, which is then reflected on your store’s payroll

I understand the customer is right, but I am also the barista doing the work to make the drink. You’re making me do extra work with a shaker instead of pulling your espresso into an iced cup with the requested add-ons.

If a door maker was asked to build some plain doors and add some fancy wood art into the corners, wouldn’t they charge more for the extra work?

Shaken espresso includes the cost of syrup, not just shots shaken with milk.

we get paid for our labor!!!! it’s a shaken espresso. don’t let them scam their way into getting a cheaper drink when we’re the ones who have to put in the work

Shaken espresso includes the cost of a syrup, so if they're getting a syrup I say yeah go for it, charge for that. If not, then I wouldn't.

Well, the shaken espresso has classic syrup. You’d have to clarify that with the customer. I personally would do an Ask Me for “Shaken”, or ring up a Shaken Espresso no classic.

I wish corporate would just make it so that if you ring up iced espresso with syrup and milk, shaken, it would just actually ring up the same price. The way our POS is set up you can ring in two things that are exactly the same and get different prices. That really the main reason people keep coming up with hacks to get drinks for cheaper, it’s because our POS makes it possible. Like, instead of making us ring up iced water with strawberry inclusions as a “custom tea,” which understandably makes customers frustrated since there’s no tea in it, they should just make it so if you ring that up it comes out as the correct price that corporate wants. There shouldn’t be “right” and “wrong” ways to ring things up. The right way should be the only possible way. Like, if someone orders a tall pike in a venti cup with extra half and half and no foam then it should just charge them whatever amount corporate thinks they should be charged instead of putting it on us to collectively decide which is the right way to ring them up. We shouldn’t have to post things on Reddit just to figure out the right way to do things. But, that said, I think you’re right, that’s the correct way. The downside is now YOU’RE the one who has to deal with the angry customer who gets charged different amounts at different stores. It should be that if you ring in what is essentially the same drink in a different way, it always comes out to the same price. The fact that the exact same drink can be a different price depending on how you rang it up is the very reason that customers order it that way.

I think it depends. If they get a triple with a slash of milk and no syrup… no extra charge. But if they get more than a splash or syrup then I would charge them for a “deconstructed” shaken espresso! But I totally understand your frustration as a DTO person, I hate when shifts don’t back you up.

I will just say, there is a noticeable difference between triple espresso with add ons and a shaken espresso. This above is my go to drink order, cuz it's cheap. If someone charged me a shaken espresso I might not say anything, but I'd notice.

The amount of work involved.

An iced espresso I simply pull the shots into a cup of ice with your choice of add-Ins and pass it off.

A shaken espresso I have to pull the shots, fill a special shaker with ice and syrup, pour the shots into the shaker, shake it, pour the shaker into an iced cup, and add milk as needed.

Edit: I think I misinterpreted your question. The flavor and texture it breaks some of the bitterness of the espresso by aerating it, incorporates any added flavors better, and it also creates frothiness with an iced drink.

It’s not only about the customers paying more, it’s about earning more labor hours. It takes a lot more labor to shake an espresso so I always charge them

No. Not unless they're also getting syrup and milk. I'm not charging someone $5 for two shots of espresso shaken
