Honestly, the floor doesn’t matter much if you don’t have strong bar partners. You could have a ten man play, but if your 2-3 bar partners aren’t all-stars, your times won’t be where you want them to be. More partners make dividing other work up easier, and ensures customers are being treated properly, but your window times rely on fast bars, fast warming, and a kind yet concise DTR.
Our store average OTW for the last few weeks has been 39-40. We typically have 8 for peak, broken down as follows:
3 bar (1 Drive, 1 Cafe & Mobile, 1 Cold)
1 Front reg/CS
1 Warming
1 Consolidation/Support
1 DTO/Handheld
1 DTR

My ideal play during peak specifically would be to be in go mode and have my aces in their places… two strong partners on hot bar, one supporting the person on cafe/mobile bar (stickering cups, getting syrup, ect), one person on cold bar, Two people DTO and DTR, one person warming, on person front and supporting warming (running food), one person organizing and handing out mobiles.
The most important part about peak is being able to stay planted in every position other than front and supporting cafe bar. If baristas stay planted and everyone knows what their responsibilities are then everything should run smooth.
Oh and also putting yourself in a position so you can easily see if you need to switch the play or assist any baristas with anything.
