i don’t let shots sit on the machine, but what is the difference between this and them just losing flavor when they sit in a drink on mobile bar for 10 minutes?

It needs to be relieved by another liquid so it doesn’t get burnt. And overtime it does taste weird but better than having a burnt espresso drink from the start

you can neutralise this effect by adding a small part of the milk to the shots, when the espresso is in the cup with the milk and flavour it doesn’t change the flavour of the actual shot (or you can’t taste it) however you can if it’s let to die with no milk

Exactly who is this for? Most trained baristas don’t let the shots sit. The biggest note to hit is it’s totally due to our grade of espresso. Which isn’t that great by many standards to begin with. But sure spout your point like most of of don’t know this hidden secret they nail into our heads at the beginning of our training and through memos the pump out weekly

Let’s do a fun experiment and report back to this post later. This week, on your next shift, make a latte using fresh espresso, and make another one using “dead” shots of espresso. Pour them into sample cups and have people try them to guess which one is which and choose the one they think tastes better. Really curious to see how often people can accurately pick the right ones and also agree that one tastes better than the other.

This is not true. The reason the shots seem to “die” is because our espresso is not a quality espresso, not length of time. In fact, certain coffees taste better after sitting, as it allows more of the notes to develop as it contacts air. But hey, former employee, good on you for sticking to standards even after leaving.

No hate, but this is plainly false. Shots don't significantly degrade until about the 10 minute mark. It's just bullshit Starbucks training. Also, from a taste perspective, the parts of a shot mixing is a GOOD thing. When tasting espresso, stirring it and letting it cool slightly is always advised. If you don't believe me, ask the SCA...or James Hoffmann...or any reputable third wave cafe, for that matter.

shut- shut up- I had a lady come in telling me it didn’t taste right and immediately I knew this was the problem. I don’t get why it was sitting tho in your situation because when we queue the shots we use them asap?

If you used to work here you should know sometimes it just happens 🤷♀️ especially in a rush and you're going back and forth from cafe to cold bar...forgive me if your shot sits 11 seconds lmao but if I have a line of stickers I'm not pulling more to get even more behind
