how to clean mastrena 2? (self.starbucksbaristas)

because i don't close often and i have questions.
ok so...you remove the drip tray and the grounds drawer, empty hoppers and vacuum up the beans. do you wipe the inside of the hoppers with a dry towel? it always leaves lint residue so i worry about this. and once you put the cleaning tablets in, should the hoppers be empty or filled with beans? also can the grounds drawer be cleaned in the hobart. also whats the best way to clean the gross milk stuck to where the drip tray meets the machine?

OH AND also once the machine is cleaned for the night, can we use it again (during that night?) like if i just need shots for an americano. i wouldn't touch the steam wand.

Long story short no. The cleaning process is pretty different on the 2’s. You should only vacuum the beans out once a week. They’re more sensitive to it and it’ll wear down the machine faster and pull shots awfully. (According to the tech people) you can clean the hoppers daily, but not necessary. My store bought a second set of hoppers so we can just change beans over and clean the dirty hoppers. If you do this don’t vacuum like you would on the 1’s hoppers.
Don’t run your tabs until after closing because once they’re run they go into a deep sleep and will take roughly 20 min to fullly wake back up. Clean everything else and then run the tabs once fully closed. The tabs only get done once a day so easiest is in the post close
Drip trays and ground drawers are the same as on the 1’s. Super easy to clean if you know how to clean the old machines.
Same with steam wand, comes off differently but same internal for cleaning

So what you basically do is:
Take out the tray, the grounds container, and steam wand and take it to the back. I also like to wipe it down too. When vacuuming out cleaning the hoppers, we do it on cleanplay days.
