Jeans are good as long as they're not too light of a wash! The
$1 is intentionally pretty broad aside from the color palette. As long as it doesn't have anything on the "no" list, you can generally wear it. Your manager is the best person to ask about specific items because they're the one whose opinion matters in the end and some managers are more lenient than others.
Most people I work with wear dark denim or black pants. Khaki pants are ok and plenty of people wear them but I'm too afraid of getting them dirty, so I wear dark navy or black jeans. As the dress code says, they cannot have holes/tears. Shirts do not have to be tucked in. Plain T-shirts are ok, as are simple patterns where all colors are within the color palette, like black & white stripes or polka dots. If you wear something with long sleeves I \*strongly\* recommend something where the sleeves fit tightly around your arms or where you can roll up the sleeves comfortably.
Non-slip shoes generally aren't required but are a \*very\* good idea since you'll inevitably be walking in a hurry on a wet tile floor. You'll also want shoes that you can spill stuff on without it immediately soaking through to your socks, which is why plain canvas Vans aren't a good idea but other Vans with a suede top are just fine (and what I wear). Hair just has to be secured away from your face, so all the styles you mentioned are fine
