cleaning sauce pumps? (self.starbucksbaristas)

okay, so i don’t know if every store uses these, but we put sauces like mocha and dark caramel in little bins, with a pump lid over the top. same with chai, white mocha, and frap roast.

for any other stores that use these, what is the cleaning procedure for the pump lids? i don’t think the ones at my store ever get cleaned… i was told to just replace the mocha bin and switch the lid over to the new one. i always rinse it off and make sure to pump the new mocha through it a good few times to clear out the old mocha, but… that still seems really gross to me, and most people don’t even rinse off the outside of the pumps, so the expired mocha still mixes with the new mocha. disgusting.

i just wondered if that was standard or not, because it seems like a health code violation if i’ve ever seen one.

probs controversial (edit: typo) here but pumps are actually a weekly task per the clean play, i believe. can anyone confirm or share more updated info?

as far as i’m aware they are rinsed, pumped through the three compartment (/hobart if you have one), dried upside down, and stored however your store stores them until next use. they are *not* supposed to get taken apart with every wash.

roll call: who has a container of spare pumps parts because those things almost never get put back together lol

You are correct in the weekly part…we still wash them after every use we have two of every pump and a bucket of parts so when we switch a container it is a container and pump that gets switched

we wash our pumps pretty much every night. it’s an easy thing to do tbh. you can easily take the pumps apart and wash the inside so it gets properly cleaned.

You are correct!!! You just have to pump soap, water, and Dani/ Hobart through them after use! Taken apart weekly on clean play!!!

We have been begging our partners to not take them apart because 80% of us are green beans who have no clue how to put them back together lmao

i taped up a photo of *liam neeson on the the phone* once next to the sign that was clipped onto the spare pump parts bucket, which i thought was funny all on its own but i came in the next morning to so many parts that they were spilling over and getting caught in the metro racks. that’s starbucks petty™️

We did them during clean play, completely took them apart spring and all and soaked and sanatized. We made sure to air dry and our shift supervisor who did clean play (8 year barista he was) made sure the amount pumped was correct. Now syrup pumps all we did was nightly hot water on the outside to get rid of the crusty. I don’t think those can be washed as we always got water in the air chamber after soaking and couldn’t get it out, so we threw them away after. I hope they change that soon

yeah the syrup pumps are more “single use” and are supposed to be disposable. so they technically aren’t supposed to get swapped over to the next bottle like we always do but rather get tossed and a new one grabbed because of the amount of bacteria buildup. like the holiday sauces, with every new bottle! the store i was at last had actual mold in some of the pumps 🤢 i was like… um y’all… i will be adding these to the order and calling another store today for a few replacements… rip. my first store swapped out all pumps during the clean play so that nobody else worried about swapping out and we could make sure all the pumps have been changed recently while also making it so we aren’t going through 14 vanilla pumps in a day lmao

I wish what was done during. Clean play was actually standardized. And we had more people. Some weeks it was just the usual cleaning while other weeks our manager had me STANDING ON THE COUNTER TO REALLY DUST. Or sometimes we moved all the fridges to deep clean, or completely empty our cabinets to clean back there, or hey go clean the menus boards in drive thru. It wAs always so confusing

wow! that’s quite the clean play set up. oof! i’ve had them be struggles but i’ve never heard that kind of use of labor unless we were DEAD and totally over staffed haha.

okay so weekly deal cleaning of the pumps is clean play, yes, but what you described is not the weekly deep cleaning. what you described (pumping water through it and putting it in the hobart) should be done daily at the switchover time before they get put away & used for the next day. taking them apart to clean them needs to be done weekly on clean play day

we definitely clean and sanitize those after every use, if you turn it upside down and squirt the water into the bottom where the pump starts it’ll squirt out the pump, it’s my favorite part of doing dishes tbh it’s super satisfying

IKR, that’s what i thought!! i did a double take when my SSV told me to just switch it over. i even asked a couple other SSVs just to make sure, and they all told me the same thing!! i’m sure gonna be calling them out by name to the SM…

I’ve switched it over when we went through mocha a heck ton (mostly winter drink launch or mocha cookie crumble launch) but only cuz I knew it would be changed again in 24 hours and date doted the mocha the same as the one before to make sure the pump mocha wouldn’t expire. As long as you date dot it correctly

Noooooo that’s terrible. You can take them apart by twisting the actual pump piece, the spout, and the bottom of the base to fully disassemble it. Run each piece through the Hobart to sanitize and then reassemble!

Just be prepared if you break the pump down very far, small pieces like gaskets sealing between pieces can be lost or washed out of your Hobart rack. So make sure you have all the pieces when it comes out.
I do a simple break down-take out the plunger use the pink sink hose (water & detergent ) put it down where the plunger was and run water through it till the water is clear coming out of the dispenser end and then run the intact (rinsed off) plunger and the larger dispenser piece through the Hobart.

When I do a thorough break down-even disassembling the plunger, I hand wash it so the sealing gaskets don't end up floating in the Hobart for days, since most of our staff don't even power it down at close. Plus a lot of our staff don't know how to reassemble a pump, so if I break it down I have to put it back together or pieces will get missed and the pump will leak or not pump at all.

^ something i like to do when i break the pumps down completely is take the small gasket/sealing pieces and put them in a clean inclusions container filled with clean soap. i’ll use a 2nd inclusions container and use sani in it, so i just rinse the small stuff and sanitize them w/o losing them to the hobart

of course if i have the actual sink compartments filled then i don’t bother with the containers

ik theyre a part of clean play but every time we switch over we pump sani through and put it through the sani dishwasher (unless its like mid rush and we are RUSHED), feels so much better than just switching over

yes that’s okay! good on you. you’re supposed to *clean* them between uses! they just get broken apart and deep cleaned during the clean play to both help prevent wear n tear + save labor during the week.

Pumps should be cleaned after every use. Especially if you switch one syrup out for another. They are pretty easy to take apart and put back together too. Huge health code violation if they rarely get cleaned and sanitized.

At my store they are taken apart, rinsed, and put thru the Hobart after every use. The first thing I learned on the floor after training was how to take them apart and put them back together properly. I'll show anyone how to do it quick and easy when they start if they're clueless.

they’re a clean play task at the store i currently work at and the last time i cleaned them they were SO bad but it gave me a lot of satisfaction to deep clean them! found mold in a couple of them 😵‍💫

I find it helpful to pump sanitizer through them before putting them in the Hobart to make sure the old sauces are cleaned out of the inside

When I worked at SBux, we cleaned them daily during the cold bar cleaning tasks (we cleaned all of the pumps at the same time). They should be cleaned at least once daily, or any time something in those bins goes past the date dot (though there isn't always time). You can clean them the easy way using the dish washer routine (by pumping the dish liquid through the pump, then water, then sanitizer, then water again [making sure *all* of the sanitizer is out of the pump]), or you can clean it the harder way (should be done in the clean play) by disassembling the pump completely, washing all components using the dish washing routine, and reassembling the pumps.

At my old store, we would disassemble the pumps, rinse, and clean the parts. Here at my new store as a supervisor, we do the previous stated procedure during deep clean. It’s kind of crazy to me but we also have way less man power (which is understandable). But yes, AT THE VERY LEAST, take the pumps out and power wash hot water through the bottom rim the water comes out of the pump clear

Here's my procedure. Any new mocha, white mocha, Chai, or frap roast goes into a newly dry and sanitized white tub with new a new pump and silver frame.

My cleaning procedure is as follows:

Disassemble the pump in the rinse sink (far right) and clean off all pieces so that when they enter my nice soapy water, they don't ruin it. When you disassemble it, you'll start with the actual pump. You'll wash it under water and then scrub it. Next, you'll take off the screw that goes with the spout (where the sauce comes out). You can scrub it if it looks dirty or dip into soap and then sanitizer. Then, the spout itself. You'll take a scratch pad and wipe the outside reall good. And then you'll take this black wire with two brushes on the sides. You'll run that through the inside of the spout to get rid of the excess sauce and sanitize it. Last is the metal frame/tray; use a scratch pad and wash it real good and sanitize it. Then you're done.

Omfg literally take them apart and clean them after every use. When I was in the Barnes and Noble cafe forever ago we used to have competitions for who could put them together the fastest. It's not difficult.

At my store they clean pumps before opening. We do change over first thing around 430 and all pumps are taken apart and cleaned and all powders or sauces are out into new clean containers. It’s all done before the store opens but it is done daily.

Pretty sure we have the same ones. Metal ones, right? We used to run them through the dishwasher. Most people without even pumping out the excess sauce in them (at this point, I would pump out excess sauce and pump soapy water through them until it ran clear then put in dishwasher). But you are supposed to rinse them then, disassemble them, and wash them disassembled! At least that’s what I think. 🤷‍♀️

At my store when you switch the pump over to a new sauce you take the push part off, run hot water through it so it clears out any old sauce, screw the push part back on and then put it in a new sauce. And then each week all of the pumps get broken down completely and claimed thoroughly so that they can be scrubbed and sanitized and whatnot.

I thought this was standard but maybe I should go check the resource guide.

Our store had at least two sets of each, so we prepped a new one each morning and when the one on the bars ran out we replaced it with the new set up and sent the old one to dish. This meant we had a clean pump nearly every day.

They definitely need to be cleaned, there was a time period where I guess everyone wasn’t cleaning the white mocha pump for some reason and finally when we opened it up it smelled SOUR. I make sure I clean all the pumps I refill now unless I don’t have time

Also the chai does notttt smell good when it sits out for longer than a day

The ones at my store do get taken apart and cleaned a couple times a week, idk how to take them apart/put them back together but I ALWAYS rinse it with hot soapy water and pump hot soapy water through it a handful of times before rinsing and pumping just hot water through it before I put it in a new container. People who don’t atleast rinse beforehand gross me out ngl

Standard is to do them as part of weekly clean plays. But me and some of my other partners at my store, don't really like just rinsing off the outside and then pumping the soapy water through it. So depending on who is doing dishes, we will either take the whole pump apart, or run water through it and rinse it off. If course for the clean play we do more extensive cleaning on them than just normally washing them. But I'm sure you get the point I'm making here

Starbucks standard is to pump detergent and then sanitizer through them after switching it over to a new sauce and then once a week totally taking it apart and cleaning each piece. However I don’t think that’s super clean so after each use we take apart the major pieces and clean them and then once a week I usually take apart the main pump totally(spring and all) and deep clean that and urnex the metal pieces.

After every use we wash them like we do the other dishes and we take them apart, our rule is if you take it apart you need to come back around and put it together when it’s done bc not everyone knows how to do that.

Pretty sure this isn’t the standard it’s just something we started doing a million years ago but during clean play we soak the pumps in urnex and then we scrub and then we wash them really well. I prefer to run them through the Hobart several times just to be safe bc you don’t want any urnex remaining on them when you’re done… another option is soaking them in K5 but we’ve found that the urnex works better

My store - first empty of sauces in the morning gets a whole new pump and bin. Then as the day goes through, you can just refill the bin. We then clean the pumps during the first major washing usually right before shift change - there's a few people who struggle to read the stems and put them back together wrong - I hate it. I hate it so much. It takes a second to check. We had an evening & morning where every single pump got put together wrong. I worked both. Made a point of talking to a couple of people, it's been a lot better since - just one of those little things you have to check - correct pump stems, putting the bean grinder back on metal filter, using correct temp water for dilutions, correct date dots, correct temps for cleaning / sani water, prepping teas for morning. Correctly pulling food for the next day. Putting keg lids on, and double checking. It's not hard but if you give zero f---s then you're screwing someone else over. Don't be that coworker. Mistakes are 100% ok, especially when you're learning but there comes a point where you lose that grace unless you got a serious reason. At that point, don't do it if you're going to continuously do it wrong. Please.

We might switch the used pump in a rush, but they are supposed to be cleaned each time. I take them apart to run water and soap through it all, put it back together to get sanitized. They can be annoying bc not everyone knows how to put them back together. That's how we end up with a bin full of random pump parts lol

when you get new ones there are cleaning tools like the ones for reusable straws to get into the pumps and clean them i usually scrub them then take the pieces (still taken apart) and run them through the dishwasher

The ones at my store are the old ones, idk if they’ve changed, but you unscrew the part you push down and take it all apart. Soak any stained parts in urnex before washing. The tiny bits I soak in sanitizer so they don’t get lost in dishwasher.

It takes some trial and error to figure out how to put it back together, but I’d be horrified if your manager didn’t know? Yeah they come apart, into like 10 pieces. Simply pumping them through is NOT enough for the syrup build up.

It should be taken apart and cleaned every day. The mocha pumps should be cleaned every time you switched the mocha into a new one. The white mocha, frap roast, chai, etc. should be AT LEAST daily.

Well you have take it apart and clean the actual pieces of inside the pump to clean the build up. The hard part that most partners can't do is put it back together.

We clean our pumps every morning at opening. So when we change the syrup we just use the same pump and then the following morning we take the pumps apart, clean them, and put them back in

So we take them apart half way when we clean them after their use. And like once a week or once every two weeks we take them apart completely (bare bones style).
