So shortly after I started almost a year ago my SM went on a LOA. I was trained pour shots in the glass then pour in the cups. When my SM returned she informed me that is not starbucks standard that the espresso shots (except machiatos and shaken espressos) pour directly into cup from machine. I'm now being told from a new SSV hired with no prior starbucks knowledge that my SM is wrong and that is not how it's supposed to be poured. I am a trainer in my store so I need to know which is correct? My SM is on a LOA again and this is Making me want to just go to my DM

my entire store (and my old store too) definitely queues the shots directly into the cup, except for macchiatos and shaken espressos. that’s how i was trained. idk if it’s standard.
queue shots, pump syrup into cup, catch shots in cup, swirl.

Your sm is correct. I am pretty sure the beverage resource manual is on the iPads( if im mistaken, definitely on the hub..) Look up espresso standards. (20 -ish year partner here)

Thank you I'll look into it. Just the way the new SSV said "there's actually no standard in how the shots should be poured" really didn't sit well with me

It’s shots in glass first then cup but it doesn’t matter honestly. Like who cares. I always do it in the cup because it saves time

I depends on what drink you are making. Caramel macchiatos you use shot glass. Lattes you pull directly in the cup . The recipe will say queue shots in shot glass.

I only put the cup under the machine for hot drinks, it can and will melt the cold plastic cups! Idk about standards but pouring it into the hot cup has no risks and changes nothing

we always use the glass then pour the shot into the cup, never just espresso directly into the cup from the machine…? (question mark because why would ur SM teach u to do this lol)

That's how I was trained and how I'd rather do it because if the shots dont pour right I have to throw that cup away and redo the shots.

My store has the newer machines, sometimes the shots pour bad if it needs a rinse or didn't grind right etc. It shoes you a 🚫 symbol meaning they are bad shots that didn't pull right.

If you get a bad shot as more then a random one off something isn’t right. Either your opening aren’t calibrating every morning or your not rinsing regularly. If all that is happening then your SSV should be putting in a ticket to get it actually fixed.

Technology isn’t perfect a lot can go wrong with the multitude of mechanics in an espresso machine that results in an improper shot. Too much water not enough water, too fast, too slow.

Shots don’t pour correctly all the time. Sometimes the machine needs to be recalibrated. One of our machines needs this quite frequently. That’s why when opening your supposed to pull a. Few shots to make sure shots are pouring correctly
