Hi, im pretty new to the whole SSV thing & recently I've started opening more. My manager schedules 13 people during our peak and won't allow us to give breaks during the second half of peak. My previous store only had this many partners on holidays. I guess I'm curious if this is common at other stores and if so how does the shift usually go?

Are you a 90k+ DT? It’s the only way I could see this sorta working. Like you would have 3 bars, cold bev, cold bev support, front, warming, warming support, DTO, DTR, handheld, mobile consolidation, and cs. The play builder doesn’t even go that high so your SM is kinda just making it up as they go.

HAHAHA how would warming support work ??? carry the food back and forth while waiting at the oven??? but yeah this store sounds insane to me. who tf needs 13 partners on the floor bruh

That's sort of how it works. Warming support grabs pastry and non-heatables, tags and bags, pulls certain items that are better within their reach, then runs food to the DTO and hand-off. They also grab extra items from the back as needed (trays of sandwiches, pastries, egg bites, etc) and grab things from the case as needed (drive thru paninis). They are permitted to leave to run things and grab things on behalf of the planted warming partner.

Depends on food volume. We we have run a warming support/front with half that number of partners. It’s just for peak. We run a food UPH of 100-140 depending on the day of the week for peak. Warming support runs food down to drive or handoff. Bags multi item orders. Grabs cake pops/not warmed food. Grabs items from RTD&E. And if needed will start putting next items in on parchment paper.

we’re only at 70k, but we usually have a cs, cold bev, cold bev support, DTO/handheld, DTR, mop, two people on hot bar, support, pos, warming support & someone to clean the lobby/engage with customers ?

Yeah they are doing pulls and sometimes start dropping tills so they can help us during close. Our peak is 2/3-close which is around when they have to be in the back but they always come up and make some drinks/prep

We are lucky to have 7 during peak! And that’s with breaks. On the extremely rare occasion there might be 8.

13 is a lot! I’m assuming a pretty busy store than. I work at about a 70k store and it ranges anywhere from 8-10 partners in the play during weekend peaks. But this can be fairly normal for some stores. At mine we run break before peak and after peak. There’s about a 2 hour zone during peak where everything is primarily based on production and keeping the lines moving. Then once it starts to mellow out we run our breaks

Even during Sunday peak at my store we've got max 8 partners and we do breaks/destress partners as needed. DTO and DTR, but DTO takes front register as well. Someone is usually solely on warming. We have partners on both bars and a support on cold bar that just flexes around as needed and a manager doing things in the BOH.

😂 😂 that's more than half the people that work at our store. If we have more than 6 it's already too many and we're a very small café that does 60k-70k regularly.

The most my store ever had on the floor during frappy hour period was I think 8 or 9 (cafe bar, drive bar, frap bar, cold bar, drive pos, cafe pos, warming station, a cs, and one shift/floater). If it was just a normal peak, usually it was about seven (cs took over warming and cold bar took over fraps). Im very curious what those other four people are doing. My store simply would not be able to fit that many people unless its for break coverage or those other partners are off the floor somehow (maybe one doing dishes so cs can stock? Maybe someone who just preps? Idk). The fact that you have that many people and None are on break? I would LOVE to be a fly on the wall for a 13 barista play haha
