Good milk doesn't have to take much longer than bad milk. Getting the aeration time right means that even if you don't groom it, the drink is still going to end up better than it would if you'd overaerated. You can cut a lot of corners to be a speed demon but never sacrifice that milk.
But mostly sequencing. Also, start a drink as soon as it's ordered and you hear it on your headset, not when the sticker prints.
