How many people you have working depends on things that are specific to your store, like business and numbers. With that said, one shift and two baristas is pretty normal in a lot of stores. Everyone has a different idea of what they call “busy”. I’ve worked in 5 different stores. A little licensed store that probably did less than $500 the WHOLE day and higher volume stores that did $10K a day. In the licensed store we were almost always alone. We only had two people working for 2-4 hours in the morning. Higher volume store might have a shift and 2-3 baristas closing.

we usually only have 2 baristas and a shift closing. the pre close usually leaves at 5 or 6 and we close at 8

I'm not sure about drive-thru stores since I never worked at one but I do work at a cafe/mobile store and at my store, it's always one shift supervisor and 2 Baristas that close.

That’s really normally. If it feels awful it generally means either your mid shift or pm shift has awful time management.

okay if your customer count for your last half hours is under 10 for each half hour there’s only 3 of you, it’s probably just time management and needing to get better about doing closing tasks in a timely manner. if it’s over 10 cosds it’s more likely that you are objectively busy, but if you’re not busy until right before close you should still have time to do closing tasks. except on a wednesday or sunday night, in my experience (i close 5 nights a week) it shouldn’t be a big deal to only have 3 baristas for a close if you’re that slow
