as i said yesterday, our walk in fridge is broken. turns out, we need a completely new one lol. SO, because we don’t have a functioning walk in fridge, we cant have our cold brew. so we have uncut cold brew in pitchers up front. we started with four pitchers. it’s now 11am and we have 0 cold brew left. i was on mop & cafe bar and i had about 20 stickers on my bean holder at one point. we were down a partner, so we had two people on bar, one of dto/dtr, one on food, and one on support/front. it was hell this morning. no whips, no cold brew, no ice (ice machine down) and very limited milks. we ended up with like a 65 half hour, and a 58 half hour.

So maybe im not understanding what you mean, but you dont have to brew cold brew in a fridge? My store doesn’t have a walk in, just big fridges in the back and same for every store ive picked up shifts at? But cold brew has always been brewed just on a shelf in the back at room temp at every store ive worked at

You don't have to dissolve ice in water if you're not using the keg immediately. Keeping it in any fridge will do. For whenever you have fridges again.

so we use the new toddy’s to brew the cold brew, then put it in kegs with water and melted ice, and place them into our walk in fridge. idk why we do it, but we do. their shelf like is like seven days. then with the kegs, we hook them up to our cold brew taps

Ohhhh so like you dont have anywhere to actually store the cold brew once its made?

yes! once the cold brew is made the legs go straight to the walk in fridge to be cooled. but because the fridge is broken, no kegs can be made, so no cold brew can be cut. basically what we did was put the uncut cold brew into pitchers, and when someone ordered a cold brew, we would do cold brew to the first line, and water to the third

Whenever we were in a situation where the tap was broken, my shift supervisor and manager just do it like where they grab a 2 liter pitcher and they put cold brew to the one leader line and water to the 2 L line
