i swear i've had the almond milk for that drink frothe OK before. the vanilla in it helped, i think. i had a barista who was able to get it semi consistently too

maybe if you add a splash of heavy whipping cream. one of my coworkers told me (for the vsccf but i imagine it might work with other milks, just haven’t tried it yet) it helps thicken up the foam and won’t make it that ugly soupy consistency. i have yet to try it tho. i’ve also found that putting it on the 4 setting will help a lot. it just takes longer (25 seconds)

Only cow milk products seem to benefit from running it through extra cycles. And even so, it really just makes the bubbles finer rather than frothing it up more. I don't think any of the alternative milks have strong enough surfactants to both keep the foam from breaking and keep the bubbles small.

in hindsight i should’ve added mocha to the ice water lol, the coconut didn’t work so well either, although it didn’t sink AS fast as the soy or oat, it still sank completely leaving just some bubbles on top

I have a dairy allergy, so I sometimes I’ll ask for cold foam made from soy milk as a Frappuccino topping to sub for the whipped cream. Maybe coconut milk would be a better milk to use for that? (Just putting this idea out there because I’ve never seen it mentioned but I think it’s pretty good)

i have a customer who gets almond milk foam every night, she’s a doll. i like to use oatmilk foam on my cold brew because the sweet cream foam makes my stomach hurt! it’s not the same texture but i prefer the texture of the oat foam tbh

Sometimes if I’m having a particular hard time getting a foamy to do it’s foamy thing- I blend it on 3, and then 4. Don’t know why, but it gives it that foam pizazz.

I did some oat foam experimenting last shift - if you let it sit for a few minutes after getting it out of the blender, it separates, and what rises to the top is _great_ foam. Completely impractical for customers but if any partners wanna make non-dairy foam for themselves, it's quite nice. I did 100 mLs oat milk and two pumps of brown sugar on 4, then on 3. (We still have Oatly, if brand matters.)

One of my faves to make a keto friendly CF was to mix equal parts heavy cream with coconut milk and a squirt or two of SF vanilla syrup. Blend on the firm cold foam setting and enjoy on a cold brew or iced espresso! It was my favorite thing to whip up for myself before clocking off. I’d never ask a barista to make it for me now that I’m promoted to customer, though.

so, I’m not at a franchise store, we’re just a cafe that serves starbucks beverages. my boss didn’t want to pay the $100+ for the sweet foam blender so I got him to get us a handheld frother. it makes the oat milk froth so freaking good, I do 100 ml of oat milk and two pumps of vanilla. it tastes like melted vanilla ice cream. we also have one of those tiny pitchers that has a frothing circular whisk at the bottom of it with a cooling setting and that makes sweet foam really well too.

ive worked with espresso in the foamers and it works well. tomorrow im going to try some more foaming agents.
my idea has been to make it “dryer” so the vanilla bean was for that reason and it tastes better.
i also feel like mocha bar powder could work 🤭

no not really, they all soaked into the ice water after just a few seconds, the almond milk was foamy enough but it’s probably best to double blend it
