Various foams question (self.starbucksbaristas)
submitted by felinefireghost
Question- when we double batch salted caramel foam or chocolate foam, are we supposed to add twice the ingredients? Like 4 packs salt, 4 pumps caramel.. etc.

Also, trainer said we can do a maximum of two batches of foam in the blender for standards purposes so I just wanted to make sure this was correct or if we are only supposed to do one at a time. TIA!

yeah standard is no batching whatsoever buuuuut that rule was made by losers who sit at desks. batch to ur heart's content and just try your best to match the ingredient ratios.

i’m on board with this but once your pour too much it doesn’t foam. you just add more heavy cream though

or setting 4 instead of 3 on the blender is for "dry foam" which just blends longer so it makes all of it foamy when you pour more :)

you’re smart

yeah ur right i usually do 3 servings max bc otherwise it causes more problems than it solves

You are never supposed to double batch or over fill foam, it doesn’t foam properly and can cause the pitchers to break.

But since we like to break the rules. Yes just make sure to add more flavors based on how much more sweet cream you add!

If you double the recipe it makes more than you need for two drinks, plus it doesn't foam as well. If I'm making for two drinks I do 150ml/3 pumps/3 packets (1.5 times the recipe).

A double batch of foam should only be filled to the 200ml line to begin with, so I feel like if it’s not foaming someone is putting to much cream in the pitcher. Making up a recipe for a larger batch ends up with inconsistency and upset customers later on because drinks taste different.

We double batch at my store all the time, with 200 ml of the cream and double the other ingredients. It keeps the ingredient ratios the same and flavor is the same.

i usually add one or two more pumps depending on how much sweet cream i’m putting in the blender

Well.. usually there’s enough foam for like 2-3 drinks. How many drinks r u making that requires u to double batch?

the amount of times i would have to make a single serving of foam during peak in my extremely high volume store is disgusting to even think about

Right! I’d need at least another blender and a few more pitchers
