Just get to know them! Before you start the modules, just sit down with them, introduce yourself, get to know them, their previous work history (I found this helpful so that you can relate certain roles to what they've done before), and get to know their relationship to coffee. Talk to them about how they prefer to learn, and try to use that to train them the way that they prefer (but don't skip out on the other learning styles, everyone learns best through all the types of learning, but they may just have a preference on which one they like)
