The policy is written vaguely and SMs generally have discretion to implement it as they see fit in their stores. There is no direct “three call outs = a write up” but irregular attendance can face corrective action up to and including separation

As far as I can understand from my SM if you call out for a certain number of shifts it flags you as someone your SM needs to talk to, but actual disciplinary things would hinge on whether you followed policy with those callouts—I.e. whether you were sick, or whether you got coverage for shifts you missed for reasons other than illness/emergency.
Our SM tells baristas that they should aim for calling out by calling the store phone 4 hours before their shifts (with some exceptions, e.g. your gastrointestinal system lost its mind an hour before your start time or you’re an opener or stuff like that).
