I’ve been working since the end of January and yesterday I was asked if I knew how to do toddies. I don’t and I really don’t know much about cold brew at all. My store is getting a renovation and I would hate to arrive at my temporary store and have to say that I don’t know how to do something if asked. Pls help!

The universal answer: one 5lb bullet of cold brew beans ground on French press plus 14 liters of cold water equals cold brew. It sits on a shelf for 20 hours before being drained. Each toddy makes 2 kegs once you cut what you drain with an equal amount of water.
To be more specific, are your store's toddies round with spigot at the base, or the rectangular self-dispensing ones?

Great, that's easier! Put the filter in that oblong basket thing and dump the grounds in. Settle that inside the big tub on the whole set up. You can put that plastic thing with the holes in the depression in before pouring the water, but you don't actually have to. You can pour the water straight onto the grounds, just be careful of splashing. Make sure the grounds all get wet. You'll want to use the same pitcher you mix mocha in to dump in 3.5 liters four times. Once it's all in, put the lid on and hit the timer button twice to start the count down. Make sure there are two catch tubs in! And be sure you're doing exactly 3.5 liters each time. Extra water will make it overflow.
