Iced coffee standard (self.starbucksbaristas)
submitted by vividlyvioletvacancy
What’s the iced coffee standard? I’ve made it three times under instruction from different shifts, and each time I was given a different amount of Venti ice scoops per bag/pitcher/cube of iced coffee.
mls91314 15 points 1y ago
We do one bag brewed into a cube on half batch then 6 venti scoops of ice
vividlyvioletvacancy [OP] 5 points 1y ago
See so this morning I was told TWO bags of iced coffee and 6 Venti scoops 😳 then this afternoon I was corrected to one bag 6 scoops
BlackberryOpposite31 13 points 1y ago
You never brew 2 bags at the same time. One bag on half batch. My store actually just uses the large ice scoop straight from the big ice bin and it’s 2 scoops when you do it that way. If you have the correct amount of ice you probably wouldn’t be able to fit 2 batches into 1 cube.
vividlyvioletvacancy [OP] 1 points 1y ago
Yeah I brewed one bag on 1/2 and then another on 1/2 👍
BlackberryOpposite31 3 points 1y ago
Okay good 😂 just wanted to make sure because it wouldn’t be the first time I’ve seen a barista attempt to brew 2 batches at once!
PercyGabriel1129 4 points 1y ago
The only thing I can think of is the fact that there is 2 sizes of bags of ground iced coffee. The 5 ounce bags should be done on 1/4 batch, and 2 bags would get the 6 venti scoops of ice. One 9 ounce bag should be done on 1/2 batch and would get the same 6 venti scoops.

Edit: a mistake
Vosstonmass1 2 points 1y ago
The 5 oz should be on quarter batch and the 9 oz is on half batch.
PercyGabriel1129 1 points 1y ago
You're right, woops
vividlyvioletvacancy [OP] 2 points 1y ago
Oh shit okay I don’t know what size our bags are
Vosstonmass1 1 points 1y ago
I think a lot of stores have their way of making iced coffee but honestly, in my opinion, 5 scoops 6 scoops doesn’t really mess with the flavor too much.
It used to be the standard to brew the 9 oz bag into an urn and then pour 1L into each pitcher and then add 3 scoops to each pitcher. There was always a little coffee left over that we were supposed to dump in the drain. I always just evened them out and added about 2.5 scoops to each . When you’re in a hurry and just want to get the the stuff made then you grab a cube and toss 6 scoops in and put it right under the brewer. Problem solved.
Galactic_9 1 points 1y ago
Okay hold on, I'm thinking "Okay yeah 1 bag half batch for two pitcher- did they just say cube? Wait, 6 VENTI ICE" Yo, in my store, we always make 8 pitchers of iced coffee with 3 scoops venti ice every morning to (sometimes) make it through peak, and 10 on the weekends. But how busy are y'all that you need freaking CUBES of iced coffee??

Edit: I am bad at remembering our own procedures apparently
Improvmomolyfe 1 points 1y ago
I can second this way. Been making it like this for all 7 years
Audreyy117 1 points 1y ago
Wait really?? I was always told 3 Venti scoops of ice
_lanalana_ 3 points 1y ago
Its 3 venti scoops if you do it in a pitcher but its 6 if you do it into a cube
smpero 13 points 1y ago
2 liters of ice per 2 liters of coffee, if you search “iced coffee quick reference” on the hub it has the brewing instructions for both the 5 oz bags and 9 oz bags
vividlyvioletvacancy [OP] 12 points 1y ago
THANK YOU. Everyone’s saying what *they* do but I want to know the standard! I’ll search it next time I have a shift!
smpero 14 points 1y ago
Im always the “it’s on the hub” person which annoys everyone at my store but it just makes it easier to know the standard and do it that way than try to figure out who’s way works best
vividlyvioletvacancy [OP] 6 points 1y ago
See I *tried* asking my shift (who corrected me) what the standard was, but she just repeated twenty times how she does it. Like, I understand you think you’re right, and you very well could be, but hearing 2+ conflicting ideas means I need to hear from a reliable source, aka Starbucks themself. She eventually tried searching it for me but couldn’t find it, and then my shift was over and I’m not staying longer just to try to find it
smpero 4 points 1y ago
Yeah that’s annoying, a lot of times I’ve found shifts just want to be right (speaking as a shift myself of almost 7 years lol) hopefully you can find it on your next shift and maybe consider printing the guidance for your store so that everyone can be on the same page, consistency is always better
Bribarista 6 points 1y ago
as long as it’s half ice half ice coffee (lil more coffee) you should be solid any way you do it
vividlyvioletvacancy [OP] 2 points 1y ago
I’ll keep this in mind

The variation in responses on this post is frightening... I'm throwing my hat in the ring with some more detail:

There are two major sizes of Iced Coffee bags (SKUs, Behind-the-Line) in circulation - 5 oz. and 9 oz. You should be careful to check the size before you tear open those bags.

5 oz. bag - 2 of these - 1/2 batch brew
9 oz. bag - 1 of these - 1/2 batch brew

This will create a concentrated brew that's stronger than brewing the hot coffees.

In terms of ice after the brew - you always want to double the volume of what's in the cube before putting the lid on. The 1/2 batch puts out a little less than 2L. You need to put enough ice to double that so that it's short of the 4L line. Depending on whether you grab level scoops or heaping scoops, that comes out to about 5-6 Venti scoops of ice (which is the rule-of-thumb everyone says, but not everyone understands why).

Try to sample the iced coffee after it's been iced down. It should have a bit of a "bite" to the taste. If it tastes diluted, it was brewed with the wrong amount of hot water.
Ordinary-Theory-8289 5 points 1y ago
At my store we brew into a cube with ice filled up to the 2L line
BuyerOk6692 5 points 1y ago
we brew a bag on a half batch directly into the pitcher, then split the coffee evenly between another pitcher which usually comes out to around 1.25 L, then just fill it up the top with ice
vividlyvioletvacancy [OP] 1 points 1y ago
If you were to brew 2 bags into a cube, how many scoops of ice would it be?
BuyerOk6692 2 points 1y ago
hmm i’m not sure cause we never brew into a cube but ours is almost a 1:1 ratio of coffee to ice. just slightly more coffee than ice
vividlyvioletvacancy [OP] 1 points 1y ago
Hmmm alright. I’ll keep asking more shifts at my store until I find an overwhelming majority
Appropriate_Ad2862 1 points 1y ago
Its would be 1 bag of ice coffee in to a cub with 4 venti cups of ice. Brew straight on top. If you do 2 bags it would over flow (Brewed on half batch). This is standard
oftbkk 3 points 1y ago
one 1/2 batch bag and 6 venti scoops of ice in a cube
RRKWD40 2 points 1y ago
Beverage resource manual has specific instructions for each size bag of iced coffee/type of brewer/low volume vs high volume stores. If you want the Starbucks standard go to storelink and download the manual. Page 57 is where iced coffee can be found.
Mea-fae_Owl73 2 points 1y ago
At my store we don’t double up. As for ice we do equal amount of ice to the liquid coffee produced. This thread now has me wondering what the official recipe is. I’m going to look it up in the Resource app next time I work.
props-and-meyhem 2 points 1y ago
My store uses 1 bag on 1/2 then 5 venti scoops ice
persona-2 2 points 1y ago
5 oz or 9 oz bag?
vividlyvioletvacancy [OP] 1 points 1y ago
I don’t know 🥲 I’ll check on my next shift
persona-2 3 points 1y ago
5 oz is into 1 pitcher. It can’t be doubled. You have to do it one at a time.

9 oz is split into two.

Once you find out which one we can help with the actual standard.
vividlyvioletvacancy [OP] 1 points 1y ago
Ohh it’s probably 9 then
persona-2 3 points 1y ago
Brew 9oz on a half. Put 1 liter in each of 2 containers. Add ice to 2 liter line. Stir or whisk ice into the coffee.
Put a date dot for 12 hours on it.
brainiaxx 2 points 1y ago
we do 1:1
hoepplease 1 points 1y ago
similar question maybe (?): whats standard for ice coffee w/ milk. ive been told different things from different people and am now thoroughly confused
MajorIsland3 1 points 1y ago
Brew ic on 1/2 batch into urn. Dispense into 6l cube. Fill with ice to 4l line.
Playful_Sector 1 points 1y ago
My store is 1 bag of iced coffee on half batch and 5 Venti scoops of ice
impasse602 1 points 1y ago
At my store we do one bag in a big pitcher that you make mocha in and brew 1/2 batch then split the pitcher between two smaller pitchers and fill with ice
Heidicindy 0 points 1y ago
I've always brewed 2 bags on full.
Loolander 0 points 1y ago
Okay 240 here with the information why it is 1 bag brewed on hlaf per 4 heaping scoops of ice. Brew it in the brewer, put it into two pitchers, and fill those pitchers with ice. You'll need 2 heaping venti scoops of ice per.

You won't need 3 venti scoops of ice. More like two venti and a tall. So if you do it in the cube 6 scoops is too much. Maybe go 5, or just stick with 4 heaping scoops.
teunan45901 -7 points 1y ago
1 bag on half batch x2 into a cube.
Add 8 venti scoops of ice.
vividlyvioletvacancy [OP] 4 points 1y ago
Oh? That’s a new method lol.
