"hi, how are you? my name is ___, can I get your name? great to meet you XXX. Hey, I hate to do this, but your volume is too high for our cafe and we've gotta maintain this as a welcoming environment for everybody. Could you bring down the volume a bit? Thanks XXX."
"hey XXX, your volume is still too high for other customers to enjoy our third place. since you aren't able to maintain a lower volume I have to ask you to come back another day. Sorry to have to do this. I hope we'll see you again soon."
Can't do anything about the trash, but the noisiness is covered by the third place policy.

Starbucks has a policy called the Third Place Policy, based on the idea that people spend the majority of their time at 3 locations: home, work, and a place they like to relax or spend social time. Third places can be libraries, bars, parks, or coffee shops, and Starbucks wants to be welcoming/comfy enough to be the "third place" where people spend a lot of time.
insert debate about aggressive furniture design here.
anyway, the policy is posted in all stores in a place visible to customers -- in my store it's on the community board; in the store I'm currently sitting in it's in a window by the door. noisiness is covered by the point "be considerate of our partners and other customers" which says that "loud or unreasonable noise, or behaviors that are disruptive to others are not tolerated"

Not a problem! If you're a shift remember to have another barista keep an eye on the interaction for you just in case. if you're not a shift, offer to spot for your SSV while they handle the situation. it's their job to enforce that Third Place on behalf of you and the rest of the team!

Honestly, I would just say something. I worked at a busy outdoor mall location and we had a group of motorcycle dorks that would come in every Sunday 30 mins before closing and just wreck the cafe. I got rotated to the night shift and everyone warned me about it. I waited one week to see how bad it was (it was bad like took us an extra 15 mins to close the lobby ) so the next week when they were ordering I asked them to clean up after themselves. I was polite but firm, 'hey, you guys leave a huge mess, and it's not cool if you can't pick up after yourselves we won't be serving you guys anymore' lots of grumbles but overall no big deal. Then about 5 minutes before close I would pull a trash can out and set it right next to them and thank them for cleaning up after themselves. Be nice and polite, if they threaten to call your manager just tell them ' please do, I have already made them aware of the situation and they will be waiting for your call on Monday' spoiler alert, they never call. The manager was happy to not lose the extra hour of labor by having to re-close the lobby.

“SIR!!! SIR!!! You almost forgot your bag of stuff!!!” Said loudly in a way to sound like you were concerned that they forgot their “purchases.” 😈
I do that just loud enough that all the other customers look up. Creates a nice big room full of peer pressure. Even if they have the audacity to STILL leave without taking it I still personally feel better that everyone saw it and is now part of this with me. ☺️
And sometimes when I’m feeling extra bold I’ll actually grab it off the table and run it to them like “here, you almost forgot your bag!“ with an extra nice customer service-y innocent and ignorant face. It really is fun to do.
And either way, even if they say “that’s not mine! It’s just trash!” It still gives me the chance to come back with “oh, well we have trash cans over here if you can just use those next time. Thank you.”
As for the loud speaker phones. I make it a point to be heard on the other end of that conversation 😂. I start loudly calling out orders that don’t even exist 😆 whenever they’re standing there at the bar. And if they’re sitting at a table being super loud I’ll start sweeping and talking on the headset. Even if it doesn’t work, it still makes me feel more entertained and positive about a negative situation.
Or, you could just be normal and just say something to them. Probably the smartest thing to do. Lol. But who wants to do that?!

I’m actually a huge introvert. That’s why my methods are more discreet and coercive 😈. Yeah, I will absolutely manipulate bad customers like that.
