Hi! New barista in a licensed store. I have some questions. Thanks for reading!
When making a frap, if they ask for espresso like for example caramel frap with a shot of espresso When do you blend it in? do you still use coffee base? Do you pull the shot after you blend since a shot dies?
When do you charge for extra syrup? When does it come included? for example if they order an iced latte with hazelnut or a hot coffee with hazelnut do I charge for syrup? Same thing with different types of milk/breve
How many pumps of syrup for a venti iced vs a venti hot? and does a venti get 3 shots of espresso or 2? I had two different trainers tell me different things.

hey i’m a barista who started less than month ago, but i think i can answer these for you both please people correct me if wrong! for the shot of espresso you blend it with the rest of the frap and you don’t make any difference in how you make the frap unless instructed! unless ofc it specifics as a affogato shot, then you pour it on top of the whip cream! syrups- the system that you typed it on has the syrups included that are not charged for (at least extra price is already included with drink e.g. cinnamon doce latte ), but for example if they wanted an iced vanilla latte, the iced latte does not come with vanilla nor is there a preset vanilla option. so you will press the vanilla syrup button on the system! milk- this is a hard one sometimes, but the best way to remember is you charge for milk when they want the drink to be made with milk, you do not charge if they 1/2” of it/ “splash.” for example if someone wanted a hot pike roast with cream, you will press the “with half/half” (free options) instead of the charged one! but if they wanted pike to be made with half and half you’ll press the breve (“half and half) option which would charge it. milks also is based on portion, if they want more than the 1/2” then initially it’ll be charged for.

- Blend the espresso with the rest of the frap unless the customer requests an affogato shot, then you'd pour the espresso over the whipcream once the frap is made
- Keep the coffee base and frap roast in fraps with espresso ^
- The register will charge for extra syrup automatically if its not a core syrup/the drink doesn't come with it. I cant remember off the top of my head if hazelnut is an upcharge. If you wanted to add white mocha to a caramel macchiato tho, there would be an extra charge since the drink doesn't come with it. You don't need to remember anything about syrup charges though since the register will do it!
- Milks are a little different. If someone wants a milk based drink (latte, flat white, white mocha, pink drink, etc.) then use the milk buttons on the left hand side to charge them for milk. Only alternative milks, breve, and heavy cream will cause an upcharge.
- For iced coffees, americons, cold brews (basically drinks that dont come with milk) use the right hand side milk buttons to give customers just a splash of milk with no extra charge
- Venti hot gets 5 pumps and 2 shots, venti iced gets 6 pumps and 3 shots. There are some exceptions (like with caramel macchiatos) but this is the general rule!

If you add espresso into a frap, you’re gonna get like 1.5 times the frap, just fyi. No idea why. At this point, I usually use less frap roast (depending on how many shots) and I use less frap roast.
It could just be bc I’m in the south, but people get PISSED when they think you’re tossing half their frappuccino, and I don’t feel like fighting.
I’ve been frapping for a year, and I kind of just expect to use less of other liquids if espresso is going in.
