Throw that shit in the cold foam blender on 3 with the ice in it. It doesn’t blend the ice up but mixes it well and doesn’t leave a shit ton of foam like the shaker

Okay I don’t completely agree with any of these comments so here is my version of which everyone I’ve met agrees to.
I line the cup to where it’s supposed to go and put the proper scoops of matcha. I shake it ten times (as you’re supposed to) WITHOUT ice. This is what gets us the drink to not have clumps. Then I put in the ice (the appropriate scoop) and shake once again. Yeah, it’s gonna have foam. What I do is STRAIN it. It helps a lot!!! And makes sure the drink it how it’s supposed to. It seems time consuming but it’s fast once you get the hang of it. It’s also 100% worth it bc you know you’re making a high quality drink.

It’s really strange to see some of these comments, I’m in Canada so maybe our iced matcha recipe is different here?
We add water to the tall base line first, then syrup, ice and matcha last. Shake really vigorously, pour into cup, add milk, lid and swirl cup to mix. I’ve never had chunks in my iced matcha and I’ve never seen it in any of the drinks my partners have made.

US version is milk up to the milk line, matcha, ice, and shake. Our matcha is pre-sweetened so no syrup. personally, to avoid clumping, I add ice first and matcha last so the clumps are kinda broken up over the ice before i shake it.

My secret: i don't shake my drinks 10 times. I shake it with the might and rage of 10 thousand gods for 10 seconds. Most my shaken espressos are amazingly foamy, and my matchas almost never have big clumps.
Edit: I also always do milk first. Matcha is usually in-between the ice and milk, but sometimes it's ice first. Either way, shake the loving life out of it.

At my store what we started doing, complete game changer we just make matcha in the sweet cream foam pitchers. Fully aware it's not standard. Everyone in my store does it though, all the way up to our store manager. But it mixes everything and then you just pour it in the cup and you're good to go. You can either just blend it with the milk and the matcha and put the ice in the cup and pour it over. Or you can put the milk, ice, and matcha in the blender and just blend it on number three.

if you can get away with it, blend on 3 in the cold foam blender. if not, then shake it really hard vertically, then turn it horizontally and do a rowing motion to create a little whirlpool in the shaker, then shake it vertically again and there should be no chunks at all

i pour the milk first to its size appropriate line, scoop the matcha in there, and shake WITHOUT ice! the foam quantity will vary between milks. coconut milk and oatmilk are the best to shake id you don’t want foam. almond milk would be a little difficult to shake w/o ice because of the clumps, so i put a couple ice cubes to break it down. i then strain out the remaining foam with the lid!

My coworker taught some of us her way, which is to put like an inch or two of milk in the shaker and then the matcha and shake that, then add more milk to the line and ice and give it a soft shake or two . Or I’ll fill the serving cup to the milk line and fill that with ice and then dump the whole thing in the foam blender add matcha and blend on 3

I would add more ice than average, shake it twice the amount, and then "strain" as much of the matcha in the shaker and pour the ice in. A bit elaborate, but this is one of the many tricks I learned to make matcha drinks.

if you have the time, the whipping blenders make the perfect matcha and pink drinks, pour all the liquid of the drink into the blender, and blend it on 4 for about 5 seconds, it’s perfectly mixed every time with very little foam. pour back into the cup after and add ice

in the shaker:
add milk to water/lemonade line
add appropriate scoops of matcha
shake vigorously. i’ve found that if they’re doing a grande for example, it won’t require as much time to shake as say a trenta (i do trentas when batching)
once done shaking, pour in cup
fill rest with ice.
note: in order to make matcha without the clumps, you will find that it does foam. for this fact, i usually always go one size up to account for the foam. so if they got a grande size, i’ll put it in a venti to account for the foam. the only time i won’t do that is when almond milk is present bc that milk never foams. like… ever.
now, i’m not saying that if they get a grande i’m putting milk up to the venti water/lemonade line. no. i’m still putting it up to the grande line but, the foam takes a bit of space and if they’re paying for a grande, they shouldn’t have to suffer and not get much liquid in there and pay to only get foam.

Honestly this is how I do it when I'm in a hurry (except the batching thing, I don't batch matcha). Or I'll put ice in at the last bit after shaking and give it like 2 shakes, just for the chill. It seems less foamy that way. Especially with mobile orders, they'll complain if they're 10 minutes later and there's so much room, so to save the time of adding milk, I just try to make it as less foamy as possible.
