How do you guys make whipped cream? (self.starbucksbaristas)

at my store we use cold canisters and 4 pumps vanilla and pitcher of heavy cream to the max line and then charge it and shake it ten times up right then upside down. then let it sit for a few minutes . I’m not really sure this is correct tho because they always come out hella fluffy at the edges and spit in the middle .

There is a Whipped Cream Routine Quick Reference Guide that is helpful, and it might be a good idea to print it out and have it somewhere in BOH to reference

After charging the canister you should:

* Shake 4 times upright
* Place the canister sideways while you make the day dot and place it on
* Shake 8 times upside down

This, OP! I find that shaking 4 times is sufficient, set the canister down to charge, day dot, then for me, *after* removing the chargers, I give another couple shakes. I find that removing the chargers and doing the second shake to be the best method of making whip, you’ll get sturdy beautiful whip every time. I think when I shake, I do two shakes upside-up, and three-four upside-down. I don’t bother with the “Shake 12 times right-side up and 12 times upside-down”, it doesn’t do anything different so long as the second shake is once the charger is removed.

you take the chargers off right away? at my store we keep them on until doing dishes lol. does it matter which?

Not “right away”… I let them lay down on their sides with the charger on, so the WC can “expand 30%” or whatever

If it comes out like that shake it upwards and downwards a few times. Also, as a rule of thumb, always test the whip before using it. When the whip sits for a while, it tends to get that more liquidity consistency.

Like a month or two ago our Krobux dm was arguing with our lead saying it was 4 pumps but either he just folded or discovered they made it 4 pumps again.

We are a liscensed store so we may just be doing it how we feel because our customers enjoy it more

I'm a krobux store too. My manager isn't great at getting us updated information in a timely manager. He's the only one that has access to it.
I've been making it as 4 pumps of vanilla since the first time I found out.

Neither am I considering I was kind of asking a question while providing a possibly helpful response, purely cause I wasn't sure myself on the number of pumps. Not my fault we can't find shit out a liscensed store that kroger and stsrvucks treat like shit

I recently (like in the past two weeks) looked at the ipad store resources and it does say 4.
