Iced Honey Citrus Mint Tea(self.starbucksbaristas)
submitted by IntelligentApricot52
How would this be punched in? as a custom iced tea or would you put it as a HCMT and then write Iced in the ask me if it doesn’t let me click the iced button.
Also somewhat unrelated question, how do you guys make your iced tea lattes. Like do you steep your tea in a hot cup or do you use the kettle used for pour overs?
I was trained to have it steep in the pour over kettle and everyone at my store does that too but recently a borrowed partner mentioned that you’re supposed to use a hot cup to steep. The pour over kettle is more straight forward with the measurements and doesn’t waste any cups, but would like to know how everyone else was trained.
Edit: Thank you everyone for the help!!

i tell people it's a hot only drink, and recc the peach green tea lem with honey blend as the closest cold alternative
piratedashel11 points10m ago
Same

Hey *psst* over here.
Yeah. Listen. Peach green iced tea lemonade with honey blend
IntelligentApricot52 [OP]21 points10m ago
i offered that but they didn’t want it cause of the sugar in the peach juice or something idk
violaaesthetic76 points10m ago
Lol they’re gonna flip when they hear about honey and lemonade
IntelligentApricot52 [OP]31 points10m ago
ikr!! i tried explaining that even without the peach juice it’s not sugar free cause of the honey blend and lemonade used but they seemed to believe that those were fine, just not the peach juice. so strange too cause most people get the tea thinking it’ll make them feel better (hence the nickname “sick tea” which is so dumb cause it has no healing medical properties) but i feel like the iced one would defo not be anything special.
peepeepoopaccount3 points10m ago
Yeah then not wanting sugar doesn’t makes sense. But tbh I wouldn’t want sugary peach juice if I wanted the tea either.
Artistic-Bit-7584-4 points10m ago
We don't use peach juice at our store, for us it's just a jade citrus mint tea bag, a peach tranquility tea bag and the honey blend. I haven't had anyone try to order the hcmt iced but quite a few of our customers order an iced London fog which we steal in a hot cup then shake with ice.
Steeping in the pour over kettle can transfer a metallic taste to the tea
Raidoch12 points10m ago
standard is take the equivalent size hot cup and fill halfway with water, steeping for 5 minutes. pour over kettle is only for pour overs
Pylon-Cam2 points10m ago
You can measure the hot water in the kettle by filling it to the proper iced line (on the opposite side as the hot measurements) as well.
Raidoch1 points10m ago
those lines are only for iced pour overs where you take a cup full of ice and extract the coffee over it using a small amount of water which still yields a full cup of iced coffee
dazedandconfusedhere6 points10m ago
It can also impart the tea flavors into the metal of the pitcher, affecting the flavor of pour overs you make!
IntelligentApricot52 [OP]5 points10m ago
oh true, never even thought of that. Maybe i’ll use a hot cup then cause that’s gross, i wouldn’t wanna serve someone that.
Motor_Intention_43244 points10m ago
at my store we'll use the pour over kettle to measure the amount of water for the size we're doing it in (on hot side) but then pour it into a hot cup to actually steep the tea and then shake w ice and milk in shaker
pixie---stick1 points10m ago
If it’s for myself I use the pour over kettle, if not I just use it to measure the amount of water
dazedandconfusedhere8 points10m ago
The pour over kettle needs to be scrubbed and sanitized immediately after if you put anything other than just water into it
pixie---stick4 points10m ago
Well of course, it gets cleaned every time I use it. I don’t put anything but water for customers.
peepeepoopaccount10 points10m ago
Personally I would just put ICED on it then tell my coworker to actually make it iced
And for iced tea lattes I brew in a hot cup for 5 min then pour into a shaker, add ice and syrups and whatever and shake it.
Necessary_Low9399 points10m ago
I’d just give them a cup of ice. Those who mention about pgtl with honey/honey blend is more sweet than the original.
clouds1837 points10m ago
for iced tea lattes, standard is to grab a hot cup equivalent size, fill half with hot water, steep for 3-5 minutes depending on tea type, then pour that into a shaker to the base line, milk to the milk line, syrups, ice, shake.
Pylon-Cam2 points10m ago
I’d just write an ask me that says iced.
To make an iced HCMT or iced tea latte, measure out the hot water to the proper iced line in the metal kettle. You’re supposed to use the kettle to measure out the water, but then brew the actual tea in a cup. As another commenter said, brewing it directly in the kettle can leave a metallic taste in the tea. Brewing tea directly in the kettle also means you have to wash it after every use, compared to only switching it out when the smallware timer goes off (every 2? hours) if you only put hot water in it.
After the water is measured out, pour it into a hot cup (choose the smallest size cup that will hold it all to minimize waste) along with your tea bags and let it brew for five minutes. After five minutes, pour the tea to the base line in your shaker along with any syrups, add milk/lemonade to the water line, and shake with ice.

the most helpful comment by far, thank you very much:))

I always just say it is a hot only drink as well. The “point” of the drink is to make your throat feel better, which is not gonna happen with an ice drink
Artistic-Bit-75843 points10m ago
It doesn't have an actual healing properties
Have_Donut2 points10m ago
Correct, but hot helps with mucus in your throat, and you can taste and smell it while congested as well.
tittywhipp6 points10m ago
Yeah but then all the sugar just makes more mucus. We shouldn't be even remotely trying to advertise the "honey citrus" as any type of remedy. Any time someone orders it as the "sick tea" I'm always making sure to correct them.
IntelligentApricot52 [OP]3 points10m ago
i know right, at least when we used actual honey packets that could potentially help someone’s throat in a home remedy sort of way, not medical but now it’s just more sugar. whenever people order a “medicine ball” or “sick tea” i always make sure to repeat it back to them as HCMT and when get say “no i want a __insert whatever name the internet has given it__” i politely remind them that the real name for the drink is HCMT because it doesn’t actually have any medicinal qualities and is just tea with lots of sugar.
IntelligentApricot52 [OP]1 points10m ago
yeah but they may just enjoy the taste. to each their own
Torirock102 points10m ago
do custom iced tea
Zealousideal-Star4481 points10m ago
I type it in iced. And we steep in the cups as we only have one goose neck kettle and 1/2 the baristas get pissed if anyone puts anything not water in it, where as the other half think you can just put left over pour over in there and have no worry, they don’t even wash it just leave it there until someone (usually a closer) comes to grab first load of dishes and gets pissed cuz it’s annoying af to clean up someone’s mess, who’s shift ended 2 hours ago!
greener-bean1 points10m ago
if you steep in the pour over kettle, you cant also use it when you have a pour over order at the same time.
Ew_Oxygen11241 points10m ago
Yeahhh our store only allows staff to have that iced. It’s a bitch and a half to make and it takes waaaaay too long.
IntelligentApricot52 [OP]1 points10m ago
fr especially in a drive thru where they ordered it but i guess it’s the same as a iced tea latte. i told them beforehand that it was gonna take about 5 minutes to make because we need to steel the tea
