(before you accuse me of being extra, we don’t have butter at my store) I take a closed container (shakers work, I use a little squirty bottle and just block off the top with my finger. ive also heard of people using the cold foam pitcher but ive never tried it), fill it like a quarter full with heavy cream, add flavors, I added 8 pumps of cinnamon dolce, 4 packets of honey, and a shit ton of the cinnamon dolce topping, and then I shook it for about 10 minutes. it’ll get thicker and thicker until you feel like it’s not even shaking anymore but you just have to power through and shake it as hard as you can and then all of a sudden the butter and buttermilk will separate, keep shaking it until they’re well separated and then I use a few coffee filters to strain out the liquid. run it under cold water while kneading it for a few seconds to get any remaining buttermilk off and then shape into a little square and wrap it up, (I use warming paper) & there ya go. fantastic on a warmed up butter croissant.
