It’s not a bunch of different recipes, it’s just like a Frappuccino, only instead of frap roast you’re using espresso shots. Exact same concept:
Remember, all drinks on hot bar, including iced beverages, get the SAME NUMBER OF SHOTS AND PUMPS, remember, VENTI ICED GETS +1 for BOTH, across ALL DRINKS!
There are three shot patterns:
Standard (all lattes, mochas, caramel macchiatos): 1:2 (short and tall get 1, grande and venti get 2)
Flat White: 2:3 RISTRETTO (short and tall get 2, grande and venti get 3
Americano (also used for shaken espressos): 1, 2, 3, 4
Here are syrup patterns; Remember the Venti Iced Rule:
2, 3, 4, 5
Exceptions:
Caramel Macchiato:
-1 pump of Vanilla, shots go ON TOP
Matcha Latte:
-1 scoop of matcha, steam powder in with milk if hot; no espresso
Chai:
Hot and cold chai lattes get normal pumps and no shots, but HOT chai is made with a small amount of hot water by default
If a drink’s base syrup is white mocha, regular mocha, or cinnamon dolce, or seasonal drinks as specified, it gets whipped cream on top. No other drink gets this by default.

zedazeni has a great breakdown of the shots/syrups numbers, so I’ll just add on the top tip we tell our green beans:
think of every espresso bar drink as a latte.
• latte = your base drink; get comfortable with how to make it hot or iced
• cappuccino = latte with extra foam
• flat white = latte with whole milk, extra shot + make them ristretto, white dot on top
• caramel macchiato = latte with one fewer pump of vanilla, upside down (shots on top of milk), caramel drizzle
• mocha, white mocha, PSL = latte with syrup and whipped cream (PSL also gets pumpkin topping)
• americano = latte with water instead of milk, different number of shots
and so on!
