does this not stain the lids? I was told to never write on the lids as they stain so easily.

They stain a bit, but thats really only if you don’t wash them properly before throwing them in the sanitizer washer.
And it doesn’t seem to be a problem for food safety, as long as you’re whipping the underside (the part that touches the beans) with a sanitized cloth when putting the lid on a clean refilled bin.

I don’t know if it’s because it stains the kids, I was always told it was because the markers aren’t food safe so we shouldn’t use them on anything. I don’t have any sources to back that up 🤷🏻♀️

Sounds reasonable, like if you’re using the markers on anything that comes into direct contact with food. Been doing this for a year and nobody has a problem with it since it’s the top of the lid and it doesn’t come into contact with the actual beans.
