Wipe out the inside, scrub out the filters, make sure it’s fully drained before you turn it on for the day! (There are different models, but for some turning it on and back off immediately before it heats up will drain the remaining water)

Hobart reuses water throughout the day and needs to be cleaned regularly to properly clean dishes! If you don’t clean hobart first thing, it’s much more of a pain to do later because you have to turn it off &wait for it to cool enough to actually touch the pieces. Doing it first thing takes 5-10 mins tops if you keep up with it!

In the training it literally says it's a dish washer and also mentions how people think it's not a dish washer.

edit: to answer your edit - it being a dish washer doesn't mean you don't scrub the items first...lol...

In the training they also say pumping wash water and then sanitizer through the pumps until it runs clear is sufficient daily cleaning, which it absolutely isn't.

Using the sanitizer as a dishwasher instead of actually scrubbing all dishes, even the ones that don't look visibly dirty, is how you get disgusting filmy dishes. Even with a freshly washed sanitizer, even if you spray off all 3D particulate from the dish, even if you run it through the sanitizer several times. The number of times I've picked up a 2L pitcher and been able to leave visible fingerprints in the built up grease film is disgusting. Everything gets a disgusting brown stain as baristas are never expected to actually scrub the dishes and taking the time means they're taking too long.

I think either works technically it's a "sanitizer" and that's what it was in the training but about a year ago sbux started calling it a dishwasher. I just call it Hobart because that's the name printed on it 🤷‍♀️

My store is the opposite - closers don't do anything and want the day part to do all of the things for them even though the daytime numbers are at so much higher. If only everyone could work hard, help each other, and remember we are in the same team...

Yeah I hear ya. I'd love for all day parts to be staffed so that mornings and mids can effectively handle the business level and that evenings can close and clean properly and efficiently. RIP due corporate staffing b.s.

Plot twist: you both work at the same store! I mean, really, that’s how it goes. Everyone has a ton of work to do and often not enough time/people to get it done.

Staffing is a whole other issue, about which I am quite upset, actually.

my last store all the daytime people would leave tasks like nitro cleaning for the closers then complain when we didnt have time to do some things cuz one of our 3 closers was stuck doing nitro cleaning for half of close

I pointed it out to a couple SSVs but no one really cares lol. I tried cleaning it once but i couldn’t figure out how to drain the water all the way and it’s way to hot to clean with the water still in there

Yes, descaling it is a monthly clean play task, and wiping down the spray arms is a weekly task, but cleaning the filters is a daily task!

The open-11 dishwashing card has cleaning the Hobart on it. Wiping everything down as op stated. I dare anyone in the comments to run a sani towel around the door and on the gaskets and in the crevices of the door of their Hobarts 🤢

Hobart tech here, please do everything the OP says, and if I may add, as a tech on the other side:

1. If your dishwasher gets a delime code, delime it!

2. If you get a detergent code and the bottle is full, look at the small red tube and make sure it's submerged in the detergent, not looping back up.

3. Most important, when any/all issues come up, please call. Even if we seem grumpy, we're happy to help you out and get you back up and running.
