I’m trained you pull them and then count them as out of freezer, since the pull should be done around 430 and the pull is done “at close”

It doesn’t really matter as long as it’s counted. I always count In freezer stuff as soon as I come in before the pull so I can just count full boxes instead of individual pastries on the cart
