I just set my availability to be what I would like scheduled. (After first clearing it with the SM so we could account for any overlap with other SSV availability.)
When I was hired I was available 8am-close on weekdays only. This meant I was always scheduled for mids or closes.
When one of the other SSVs had ongoing medical treatments on weekends, I volunteered to switch up my off days. I set my availability to be 8am-close Mon-Thu and all day Sunday. I worked 4 closes, had Fri/Sat off, and opened Sunday.
Then one of our openers quit and I moved into the gap. Changed availability again. Then it was open-3pm Sun-Thu, so I worked mornings or some early mids.
Now it's open availability for development purposes, but i suspect I won't last long with open availability. It's too exhausting to never have 2 days off together.

i feel like a good way to go about this is to as transparent as possible with your sm. of course im not sure how he is but making him aware of what you have going on outside of starbucks is important. it is great that you are flexible and able to work any time of day but expressing how the inconsistency isn’t conducive to what you want and have asked might be the start of necessary work-life balance. also, how many other shifts does your store have and do they also have inconsistent schedules? at my store, me and one other ssv will alternate opening and early mids, we have two more that do the same for closing/late mids and then we have two other strictly mid shifts
