Okay so I have been a barista for about a month and a half now. There’s still some questions I have that I haven’t gotten around to asking anyone yet so if anyone feels inclined to help, I appreciate you!

- for a shaken espresso, I know the syrup is half pumps. But if someone asks for a venti shaken espresso with 8 pumps (for example).. then would that also be half pumps or full pumps? I guess that sounds like a dumb question but I’m wondering if someone specifies an amount different than the standard, would it change to full pumps?

- what’s the policy on food item markouts each week? I think I remember there being 7/week, but is there a limit on how many a day? A coworker will get like 4 items at a time and use separate transactions to use his markouts all at once at the end of the week. Is that allowed? Just need some clarification on the rule

- when making a regular iced green or black tea, do I use tea and water or is it all tea from the pitcher, no water?

Syrup pumps: use the number of pumps requested, whatever pump comes on the syrup in question. For example, 8 pumps of brown sugar would be 8 half dose pumps. But white mocha only uses a full dose pump, so someone who asks for 8 pumps white mocha should get 8 full pumps. If someone *does not* specify the number of pumps, the default for shaken espressos is to halve the number of full dose pumps. So if the order is just “venti shaken espresso with white mocha” you would put in 3 pumps of white mocha because that’s half the standard 6.

You get 7 food markouts in a week (Monday-Sunday) and you can use them however you wish as long as it’s during your shift or 30 minutes before/after. You can use all 7 in one day if you want.

Measure tea to the base line and then add water to the water/lemonade/milk line. For tea lemonades, add lemonade instead of water.

This is incorrect about the syrups.

The beverage resource manual was recently updated to clarify that syrup and sauce pumps doses are based on the beverage recipe, not the bottle. So if someone says 8 pumps in a shaken espresso, that is ALWAYS half dose pumps, regardless of what the pump on the container/bottle is.

Food and drink Markouts are not allowed on your days off. This was changed because of tax laws on benefits outside of working hours (these laws were more lenient during peak Covid times)
