A big life change usually allows you to submit a new request even outside of open enrollment. Moving, getting married, and having a baby are three of the reasons that qualify at the moment that I can think of but they are all listed on sbux ben.

You're SOL unless you have a Qualifying Life Event. This would be something like moving house, marriage, divorce, birth, adoption, etc.
Losing Coverage is a QLE but in this case you would not be eligible - losing coverage refers to stuff like turning 26 and coming off your parents' insurance, or losing eligibility for Medicaid/Medicare.

There was a problem with my sisters health insurance and she ended up not getting any. She called and was able to still get coverage for a different plan.

If you're integral to their operations you could talk to them and be like "help me now or help me after I quit and get rehired and start the onboarding process"

That happened to me once and they were really nice about it. They got me reenrolled without any issue. I would try calling again.
