I don’t make the rules, but I’m pretty sure it’s because it’s a “traditional American holiday” like in terms of traveling and family time. (People don’t really gather for Columbus Day…)

Thanksgiving is pretty much the biggest holiday in the US that almost everyone celebrates and gathers with family for regardless of their religion……I don’t think many people are “celebrating” Columbus Day and gathering with their family’s for it lmao it’s a just a day off lol

It’s probably mainly because of profit but also Starbucks has a “progressive” company image and recognizing Columbus Day would be problematic for multiple reasons. It’s not a real holiday anyway since no gathers for it.

Short answer, we don’t.
Long answer/story, last month I spent quite a bit of time trying to explain what holidays we get time and a half for to my coworkers. It was September 11 and we live in NYC so a partner was wondering if we got time and a half, to which I said no, it’s not a bank holiday. To the question of what’s a bank holiday, I said it’s a set list of holidays where the banks are closed on. “But today is Sunday, so aren’t the banks closed? So that would make this a bank holiday.” Eventually I gave up but I’ll remember that conversation any time a bank holiday rolls around
