I forgot where I saw it but when I am training new barista’s is it still ok to use a spoon when making a drink that in the default recipe has whip?
So you don’t get foam in the drink.

A mocha is supposed to have a little foam and whip. If they ask for no foam, then yes, you’d hold back the foam with the spoon or scoop it off prior to pouring

No so let’s say they order a mocha, mocha should have no foam only whip on top. So I have them use the spoon to hold the foam back when they pour it. So it will just have steamed milk and whip on top

not sure why you’re being downvoted. this used to be standard according to other baristas on here but i wasn’t trained on it so i’d say no. i’d only do it if the milk has a lot of foam because i accidentally aerated it too much. otherwise you’re good!

Yeah I was trained to not get foam in the drink, but if u steam your milk correctly the foam pours at the end , so just stop pouring ab 3/4ths of the way and you shouldn't get that much foam in the drink

What a lot of baristas don’t realize, is that they need the spoon more than they think…
Most of the recipes call for at least a little bit of foam, but I’ll see partners pour for a tall and then end up with the foam reaching the max line…
If you have the finesse to get that light foam every time, you don’t need the spoon. But if I see that I’ve over-aerated a bit I’ll definitely use it to get less foam.

yep this, i use the spoon any time i’m in a rush and this accidentally happens. if you’re used to working it into a busy routine, it doesn’t take much time at all & it helps assure beverage quality.

I actually just found my answer on store link, yes it’s ok to use a spoon on drinks with whip that don’t have foam in the recipe:
BAR SPOON A spoon should be used only when the beverage you are making does not require foam (for example, a no-foam Caffè Latte or Caffè Mocha) or anytime you need to make the moment right for a customer. You should always use a spoon when making an espresso macchiato for topping with a dollop of foam. Bar spoons should be removed from the steaming pitcher during steaming.

If you look at the recipe card for mocha it says fill with steamed milk and top with whipped cream.
A latte for example in the recipe card says “fill with steamed foam and 1/4th foam”.
Mocha recipe omits anything about foam, that’s why I ask.

If you're steaming milk correctly, according to Starbucks, you won't need a spoon. However it's inevitable that you get some foam in a drink like a mocha.

It’s so weird. At my old cafe, we had a smaller spoon that we always used to gently blend the espresso into the syrups and to scoop out a dollop of foam to blend with the espresso. Then use the spoon to pour the milk and top with foam. I miss my handy dandy spoon.

Hot drinks woth whipped cream still get foam. The recipe cards or iPads don't specify it, vut you can check the sbux app and by standard all of the steamed drinks have foam even the mocha and white mocha. I personally don't use a spoon I just make sure to aerate the milk properly and pour properly as well. It takes some practice, especially with the mastrena II.

I just don’t aerate the milk when people ask for no foam or making drinks that require no foam with whip. It’s too much effort and time consuming to use the bar spoon
