That is very against health code and yes, very *gross*.
If baristas aren’t using the appropriate lines in the various pitchers/shakers etc then they need more bar training scheduled, not a bizarre science experiment curdling away on the counter.

This just reminded me, my high school would weigh the amount of food waste after lunch and keep a running tally of how many pounds was wasted every week. Some people were legit anxious to throw out food because of it so it was lowkey effective 😅
On topic, I get that we can waste a lot of milk if we aren't careful and I don't think it's the *worst* idea to give partners a visual so they understand. (Though I would def keep that out of customer eye sight...) That said, I make every effort to pour to the exact line, and even when I'm following recipes to standard there's sometimes extra milk. Not sure why. But either way, personally I'd rather throw out an ounce or two than steam too little

One, that's nasty. Two, if they are *that* concerned about waste, the standard used to be for whipped hot bevs, to fill the pitcher to the steam line underneath the size. Grande for a venti, tall for a grande (talls still go to the tall line) and it makes the perfect room for the whipped cream. Just leaving all that steamed milk out in a container is so nasty.

This isn't anything new. When we would have high waste amounts, we would do this once per day part for a day or so for 30 min. It was a visual for partners on how much product was actually being thrown away so they can adjust. Maybe move it out of view of customers and not let it stay around all day? I've been a certified food handler for nearly 2 decades and know of no safety guidelines that would violate. It would only violate anything if you were serving it.

Hopefully partners that just use whatever can adjust. Again, it's an additional visual tool for partners so that they can see exactly how much milk and other stuff goes straight down the drain .
