Matcha lattes: Has anyone mastered the the “no foam” for Matcha lattes ? Are Matcha lattes meant to be foamy or not foamy ? (self.starbucksbaristas)

Hi Former Barista here and I am curious.
Was there ever a way to make foamless matcha lattes without wasting milk?

When I used to work for Starbucks I felt as if I sucked at it because I’d measure the milk right but all my matcha lattes would have some foam; like it was almost impossible to make it with NO FOAM for me.

Now no longer a barista , making matcha home , the instructions I follow (at home) stated to whisk for foam…?

Any matcha experts here to clear up some things?

Not a matcha expert but I believe traditional matcha is whisked and milk is poured in after (I may be wrong here), but steaming matcha in milk does make it pretty foamy. Starbucks matcha lattes should have the same amount of foam as any other steamed beverage.

You’re right! Steaming matcha in milk makes it very foamy. Till this day I am just confused on how could I not waste milk when someone wants a no foam matcha latte when no matter what you do ; it’ll come out foamy. Like at home I even tried maybe stirring it with a spoon but then it’s clumpy lol.😭

And I am curious if anyone else has this issue.

My kiosk, years ago, would add hot water to mix the powder and then use milk to fill it up.

Yes you can make it no foam. Add extra 1cm of milk and only aerate for minimum required. Then hold back with spoon and scoop of extra.

That I have tried as well but the amount of times someone pointed out there was a film of foam still or if there’s no foam at all but I need to add more to reach the brim really got me.🥲

Totally not standard, but the foam blender is your friend. All ingredients minus the ice, pulse it a few times, then pour over the ice.

This girl comes in every day I work just to get a no foam matcha latte from me. I feel honored😂 the spoon is your friend! I add a full scoop of ice to the shaker and the cup, and strain with the spoon. Comes out perfect every time!

If it's ice, I shake it and strain it, leaving the ice and most of the foam in the shaker. Top with more ice once it's in the cup. It's not 100%, but it's pretty foam-free.

To answer your question traditionally made matcha should definitely have a good amount of foam.
