the importance of dating the trays correctly (i.redd.it)

THIS IS MY BIGGEST PET PEEVE AS A NIGHT TIME SHIFT. And if its not dating the trays, its throwing food from one tray onto another without checking the date. At least our local food bank is getting their fill of sweets.

why wouldn’t yall date the individual packages ? having to switch out the entire tray is too much when it can easily be fifo’d if you date the individual pastries.
BiochemistChef 6 points 8m ago
Because filling out day dots for 100+ items in a busy store is too time consuming
clouds183 6 points 8m ago
do yall not have the sticker printer guns?

you also don’t have to fill them out, you can just put the day if you only have day dots.
BiochemistChef 4 points 8m ago
Not when I was with the siren. Closest we got were date stamps for stamping the day dots. It made the trays doable but not individual pastries and actually putting the sticker on everything would take 15+ mins in of itself. Hence the trays, because there were several carts
Zealousideal_Yam6226 3 points 8m ago
Its actually "Standard" to date pastries by the tray.

We do date brealfast sandwiches individually, but thay doesnt work as stellar as youd think. Somehow were always out of stickers or the date gun isnt set right.

Same !

We date everything individually at my store 🙂

Do u know how to effectively use them omln egg bites??? They never stick :/
HarleySpicedLatte 2 points 8m ago
I put them on my finger then the egg bite. It's the only one that seems complicated
horriblyIndecisive 2 points 8m ago
Hope my openers figure that one out

for context, i pulled all/most of this food last night in my pull, with no carryover. these are all going out now because the morning people couldn’t bother to change the trays correctly
neilgreenbreen 36 points 8m ago
Pastries have a 2 day shelf life…
bellamythos 6 points 8m ago
I think what OP’s saying is that the trays were mislabeled. so you’re right, pastries have a 2 day shelf life and they *shouldn’t* be going out, but because the trays weren’t changed, it looks like the product was pulled two days ago (when it wasn’t, OP mentioned there was no carryover) and it’s being donated as such
Wspitsamanda [OP] -5 points 8m ago
right, but they were on trays to go out tonight and my sm was there and saw that
rnaggie53 15 points 8m ago
I feel like it’s more effective to transfer the pastries and fifo them individually if they were dated individually. I see how it’s frustrating for you, but it’s also frustrating because the morning people are doing their job as they should. It’s not convenient to transfer the whole tray.

I swear this happened almost every day for like a week at my store too. I do my 3hr pull and date the trays per our store standard, then I come in the next day to find that opening/morning baristas have just tossed everything onto the tray with yesterday’s product, with the tray labeled to go out that day, and it all has to go because it’s mixed together and I can’t tell what’s carryover and what’s actually going out 😔

(what we usually do is date trays when we do the pull, then in the morning, carryover pastries get individual date dots before you add new product to the tray. and it worked for us since I started over a year ago! but our morning baristas haven’t been following procedure, and at this point I’m about to start dating individual pastries when I do the pull)
Wspitsamanda [OP] 3 points 8m ago
that’s what’s supposed to happen at mine, too! but i’m going to start doing this too because it’s so out of hand, this isn’t the first time we’ve thrown out tons of product. people are telling me to date every single pastry i pull, that would take so much longer and if the morning followed standard none of this would be an issue
