So I need mondays off every week, I understand schedules posted for 3 weeks but afterwards how do I request mondays specifically, do I have to talk to my manager?

You have to submit a new availability request on sbux partner hours - you can use either the app or $1. Select all the times you are available to work. Technically that’s all you have to do, but it would be a good idea to let your manager know in person that you’re changing your availability.
