People know espresso shots contain caffeine. That's common knowledge. It's not like the refreshers or frapps where the caffeine isn't obvious.
Espresso shots are entirely their own choice. They know,they just don't care. A guy asked me the other day why he can't get a Trenta espresso drink. I jokingly said starbucks worries about caffeine intake. He didn't take it well. We don't get paid enough to babysit adult's beverage choices.

people do NOT know what they’re ordering and it is by FAR the worst part of the job. i would rather make drinks with 10+ modifications all day long rather than have to explain one more time that yes a latte has caffeine and no you cannot have a shaken espresso with no ice.
the other day someone asked for a venti iced latte with no milk and i asked did you just want espresso? and she said no. i explained to her that a latte is like 90% milk and she just said okay and chose a non dairy substitute.
maybe i’m just being a hater because i obviously know all of the basic coffee recipes as a barista and it may not be as common of knowledge as i think it is but it’s so frustrating after a while

Nah but the thing is that it should be common knowledge! If you want coffee without milk, then either order a regular coffee or order espresso with no milk. Lattes, Cappuccinos, Macchiatos, and Flat Whites are not coffee! They are "handcrafted" espresso drinks. Espresso uses coffee beans, but it is not in and of itself, "coffee." This is why we always make sure guests know when they say "Iced Coffee" that comes with no milk. And if they say "Oh I need milk" I gently redirect them to a Iced Latte, with whatever sugar-flavor they want

today at work someone ordered a venti iced latte saying they wanted less ice, but more coffee not more milk. i proceeded to explain what a latte is and how an extra shot of espresso costs $1 so her drink is going to be very expensive 🙂 and she was made we couldn’t just do it for free (after knowing that she was getting espresso and not just iced coffee)

I'm more wondering why with some drinks it's legally required to either limit caffeine or warn consumers that it has a dangerous amount, but when it comes to Starbucks there are none of those requirements despite the fact that customers can order up to twice the dangerous limit.

I thought it’s the same reason high gravity beers (run through identical systems) are typically served as 10 or 12oz instead of 16oz. Pumping nitrogen into beverages makes you absorb it faster. It’s not more caffeine by volume, but it feels like more.

once when I was loaned out to another store in my area to cover a shift, I got an order ticket for just 16 espresso shots… I asked the shift about it thinking surely this is a mistake, and they were like “nope this guy’s a regular - he orders this every couple days” …I still wonder if that guy’s okay😭

This is absolutely whack, I worked for the siren for so long and it blows my mind what people think is appropriate to handle. OP, education is important because a shot of spro doesn’t last more than 45 seconds without help from something making it sustainable. Education is important, but at some point with this garbage (I say as someone working in craft coffee), just give them cold brew concentrate and wait. It’s going to be cold anyway

There's actually not much consensus on the "dead shot" thing. I think from what I've researched, the shot doesn't actually change composition in any meaningful way after 45 seconds, it just gets colder. People tend to think the crema dissipating means something has gone wrong, but nah, it's just some essentially flavorless gas that eventually manages its way out of the shot. It doesn't really take the flavor away with it. I think a lot of what people think is "shot death" is actually just the fact that espresso isn't particularly pleasant tasting when it's cooled off.

A note or label would be appropriate, but I have no interest in limits from the business side.
Public pressure and laws discourage drunkenness, but the number of drinks. I can't drive after two beers, but others can, we set a limit on behavior, not consumption for that reason. That's why alcohol labels list content, not how many shots or drinks you can have.
On the other hand, I can put away five or six shots without noticing, ifanything it makes me sleepy, i literally drunk coffee ifi can't fall asleep. More than that I might get heart palpitations but no buzz, while other people can buzz or even get headaches from the marginal amount of caffeine in decaf.
IOW, bodies respond in so many ways that limiting service is either ineffective or counter productive. Labels and information, and if necessary public accountability for the customer's poor choices are the answer rather than a mandate.
(Also: people sometimes take large amounts to break down into multiple drinks later, which also sidesteps the potential problem of harm)
