It’s shitty, but perfectly legal of them, unless it somehow constitutes discrimination (ie religious barriers, health problems). Unions can work clauses into their contracts that expect availability to be respected, but that’s not going to help in the short term. May be time to look for a job/store that respects you more :(

They CAN, but it's a bad idea and a good way to lose all their staff. Best practice is to always ask if they want to schedule someone outside their availability, and do that only rarely.
