Where on earth are you working that a gallon of whole milk won't be gone in an hour? I mean should definitely be going in the fridge in between fraps as is standard. I feel Starbucks needs to add speed wells to the side of bar to hold down a 2% and your alternatives and restock from the bottom fridge as needed into the countertop cooler. I've seen other shops follow this model and I know it would reduce repetitive energy strain from bending so much.

Pro tip: stop ordering fraps, especially for your children. Go get a nice normal milkshake instead of a caffeine milkshake for your 6 year old at 9 am.

??? Where are you that that's the case???

Because I my state we could only keep milks out in approved containers, aka those double walled carafes for a max of 2hr, switched out when they went out of proper temp. Bar milks are to be put back immediately after use and are not allowed to stay out and must be dumped once they get out of temp.

Weird, I thought Canada was way more strict with this sort of thing than us.

If there's a milk on the counter for more than a minute someone is on your ass here. (Or should be) it's drilled into our routine to put it away as soon as were done pouring.

And if it's on the counter when EcoSure walks in?? Ya ded lol

I'm glad all my coworkers agree we care more about our own health with not bending down and opening and closing fridges 1.33 times a minute. There's enough burn and rsi hazards already.

If you really get on people's case about doing this between every single car then that is really dumb and you should relax

... after 4 hours at 42 degrees F, they start to grow a significant amount of harmful bacteria.

at exactly room temp, this process is MUCH faster. and to be accurate, behind the bar isn't room temp. it's even warmer.

so, at your logic, milk is out on the counter for 4 hours. when you put it back in the fridge, it doesn't instantly hit 41 degrees F (safe).

so not only is it growing bacteria faster than you think, but it's been growing bacteria for longer than 4 hours.

while it often won't make you violently sick, your stomach won't have a good time with it either. diarrhea, nausea, and gas being the most obvious symptoms.

To take it further! every time it leaves that fridge to pour a drink, it rises in temp. 1 time won't really do it. but if you make 20 drinks with that milk in 1 hour, putting it RIGHT back up every time, after that hour is over it's clearly above 41 degrees.

i've taken food safety training twice, and manager food safety training (basically the same) a 3rd time.

put that shit right back up, no exceptions. you have a lot of drinks? fill up several cups of milk in one go, but put that milk RIGHT back up. no excuses

Hey question, what do the food safety training say about taking things like the refreshers/lemonades/non dairies out of the fridge to room temp for the whole day and back to the fridge? Anything? Cause I always thought that was also not good.

DISCLAIMER: i understand food safety and DO NOT leave milks out longer than they should be. i work at a high volume store where we go through a couple gallons of milk an hour and when they’re not in use they are stored in the fridge. don’t take this so seriously lol

Yeah a lot of my coworkers leave milks, especially alternatives like coconut that we don’t use a lot. They’re really bad with whipped creams. I had to throw away 4 whipped creams one day bc they were left on the counter so long they were warm. I’m not a shift and I don’t want to be annoying .. but ew. Ugh, one partner also put the bar spoon ON THE COUNTER and the ice scoops too! Every time I see it and just snatch it away and throw it in the hobart. Then she always asks - where’s my scooper!

Please be annoying, We are all supposed to hold each other accountable. It doesn't matter if you're a barista and see a shift doing something wrong, kindly call them out. My store manager won't even work on bar anymore if I'm there because I call him out on so many things that he does wrong or out of standard. And I don't care, it's not hard to understand, like Look at all the disgusting stuff that touches the counter and you want to put your ice scoop or a spoon that goes into people's drinks into that mess?? How.

So next time she asks where her scooper is, tell her she set it on the counter so you threw it in the wash. Help her build that habit.

For an entire month, after several attempts at coaching went nowhere, I went around closing the ice bins loudly behind people and reminding them that they needed to do it and if they were open when EcoSure walked in we'd get criticals. Now they all do it. Was I annoying? Yes. Did it force them to build the habit? Yes.

My old store was almost shut down by the health department for leaving milks out. Not exactly something you want to make a habit of doing.

And we didn’t even leave them out often (though certain shifts would let it fly more than others), but the health inspector just happened to see some out once when she came by and then bam, the store was being audited and was on a final warning.

I’ve been complimented for being diligent and putting milks away and I’m like, well I wouldn’t want to drink gross milk so I always put them away whenever I’m not actively making something. It’s seems like common sense

During a rush, I don’t bother worrying about it because the milk will be empty in the next fifteen minutes guaranteed, but once it’s slowed down enough, the only milk I leave on the counter is the 2% if I’m currently using it. It’s not even good safety for me, I just need things to be in their right place because I’m autistic lol.
