I remember ordering this years ago then got into coffee based lattes. How do I go about ordering it? Is it less pumps of chai or less sugar?

The sugar is in the chai concentrate. To decrease it you have to get less chai which will also decrease the flavor. Decrease it too much and you will have vaguely chai flavored hot milk. :(
I suggest if you do that you also ask for no water. It will help it taste less watery and boost the flavor a little bit of the remaining chai concentrate.
I think there is a chai concentrate out on the market that is sugar free. Try checking online. Tazo makes a skinny chai concentrate that you can buy at target.

You can also always get a custom tea latte with Chai tea bags and completely control the sweetener by subbing the liquid cane sugar syrup for whatever you want!
