Can we use the sink in the back over the dish sink for cold brew?

I was taught to never use that water for anything that gets drank, especially since there’s not a filter cap thing on the end.

You can only use filtered water for cold brew and anything else for consumption. Some stores have a filtered tap in the back, but you definitely can’t use regular sink water.

That’s what I thought :/ an SSV at my store made CB and kegs with that water after she was told not to… how big of a deal should that be? Like write up?

To put it in context, using filtered water isn't like a 'violating starbucks standard' tier requirement. It's an ecosure / health department food safety requirement. This SSV could get your store in deep shit.

Agreed. It's not guaranteed foodsafe in the BOH. Triple filtered water is meant for consumption by requirement, not suggestion.

The sink water isn’t in the triple purifier system (I’d honestly still drink it but I wouldn’t sell it to people. If you can wash dishes in it you can drink it)

I kno it may be a pain in the ass to constantly walk up front for pitchers of the filtered water and to the back by the cold brew system but definitely should not be using the unfiltered water in the back from the dish washing sink. Somebody showed a trick on here recently where they still had the big white Toddy for the old way we used to brew cold brew and they would fill that up with the appropriate amount of water and then place it in a way where the Toddys spout is hanging over the top of the new cold brew system and just let the water go in

dish sink no. at my store we have a tap for water thats filtered and meant for consumption that we use almost exclusively for cold brew and place the systems very close to that tap.

The store I used to work at got a filtered water hose in BOH during a remodeling, but the hose got super moldy after 6 weeks because everyone hung it up instead of laying it flat and water just sat for 24 hours at a time so we took the hose out completely.
